Feeding a family of 5 with only a few ingredients while still making everyone happy... impossible? I think not! Homemade chicken and broccoli, sushi rice and cinnamon apples. Weird? Maybe a little but it worked. I’m limited on eating the rice. Kid 2 won’t eat the broccoli or onions. Kid 3 won’t eat the rice. 🐥Made this Lighter Chicken Cordon Bleu for dinner - a hit with the whole fam!!🐥
Modified this from a recipe I've had from about 10 years ago from an old Cooking Light Magazine :)
8 boneless, skinless chicken breast halves
1/2 tsp pepper
8 slices lean deli ham
1 1/2 cups shredded mozarella
2/3 cup milk
1 cup panko or finely crushed breadcrumbs
2 tsp paprika
1 tsp garlic powder
1/2 tsp salt
1 can cream of chicken soup (i used Health Valley Organic)
1/2 cup greek yogurt
2 tsp lemon juice
Flatten chicken to 1/4 inch thick.
Sprinkle with pepper, then place a ham slice and 1-2 Tbsp cheese down the center of each piece.
Roll up and tuck in ends, secure with toothpicks.
Pour milk into a shallow bowl.
In another bowl, combine breadcrumbs, paprika, garlic, and salt. Dip chicken in milk, then roll in crumbs.
Place in a greased 13x9x2 inch dish. Bake uncovered at 350 for 25-30 minutes or until juices run clear.
Meanwhile, in saucepan, whisk soup, yogurt and lemon juice until blended and heat through. .
Serve with your favorite veggie on the side and pour sauce over chicken or dip in the sauce. .

Lately I’ve been trying to eat more raw foods, limiting to one cooked meal per day. It’s easy here to do in Hawaii where fresh fruit and veggies are so abundant. Raw foods definitely leave me feeling more energized and vibrant. @thetribelayoga prepared our cooked dinner a few nights ago with green veggie nuggets, quinoa, boiled green banana and of course a kale salad. It was sooo ono. Did you know you could boil green banana and use it as a potato replacement!? I’m so grateful my seastar turned me on to this!!

I wanted to share some kitchen safety tips for other kids who want to learn how to cook!
1. always ask an adult 1st, never start cooking or baking by yourself! that’s dangerous!
2. always wash your hands
3. wash your ingredients - your fruits and veggies!
4. prep your work area so that there are no accidents
5. clean up as you go
6. be prepared in case of an emergency. know where the fire extinguisher is! baking soda is helpful too! it can smother a small fire.
learning how to cook is fun, but we have to safe.
