I am not a person to just throw in the towel when life gets tough. It’s life and it has its peaks and lows. Yet, it gets us to where we are to be. ❤️ Yet, I knew I was meant for more back a few months ago. Terrified of what was thinking about doing. Leaving one company that brought me friendships and such joy. To move on to the next chapter in my life. I was afraid. Yep, fear stood in my way. 😬
Well I was tired of going back to my viscous ways of being stuck in the comparison trap. I was doing everything I was suppose to be. Even feeling like a rabbit at times with the amounts a veggies I was eating. On top of working out 6 times if not more a week.
Not only that but I was feeling like an old lady. Needing to be in bed at 9 pm and sleep for 7-8 hours just to function. Yet, in the end I was still waking up tired and restless. I knew then that something needed to change. 😃

Such a versatile dish that can be eaten over days, frozen or taken to work. As it was finally an autumnal day here in Melbourne today, this was what the kids had for afternoon tea. Definitely hits the spot! And it’s been known to be a marriage saver hasn’t it @janap_keto_in_greece 😋.
I made this one slightly differently to the ones I’ve made before. A bit more of a time saver, just as yum.
• 1 serve fat head dough - I used coconut flour this time
• Bolognese sauce - everyone has their favourite way of making this. My secret is using tamari sauce, cumin & Italian herbs. I also added grated cauliflower in to this today
• low carb white sauce • extra cheese for the top
Step 1: make your bolognese sauce. I like to have this simmering on the stove on very low for an hour so so to really bring out the flavours. Pre heat oven to 200 Celsius.
Step 2: Make your fat head dough while your sauce is simmering. 170g grated mozzarella cheese, 1/4 cup coconut flour, 2 tablespoons cream cheese, 1 egg. Put all except egg in microwave for 1 min, stir, then for another 30 seconds. Stir in egg well, add extra coconut flour if needed. Spread out between two layers of baking paper, remove top sheet then bake at 200 for 10 mins. Lower oven to 160.
Step 3: Make your white sauce. I used a different recipe this time. 3 eggs, 200ml thickened cream, 2 tablespoons psyllium husk, 1 handful grated cheddar cheese. Mix all in a bowl with a whisk. It will thicken up on standing.
Step 4: MAKE YOUR LASAGNA.
Layer like this: 1/2 meat mix, 1/2 fat head dough sheet, 1/2 white sauce, then repeat. Finish with more grated mozzarella. Bake until golden brown, about 30 mins!! Yum!
