3/4 cup coconut oil
1/4 tsp salt
1 egg yolk
1 cup almond flour
2 tbsp coconut flour
1/4 cup lakanto powdered monkfruit sweetener with erythritol .
1/2 cup lakanto powdered monkfruit sweetener with erythritol
4 large eggs (I didn’t want to waste the egg white from the egg yolk used in the crust, so I added it in here too)
2/3 cups fresh lemon juice (I used all the juice from 4 lemons)
2 tbsp lemon zest (I think I used a lot less then this, I got tired of zesting the lemon lol)
4 tbsp almond flour (I did 3 tbsp almond flour and 1 tbsp coconut flour) .
16 servings; 179 calories, 16.8 g fat, 3 g net carb, 4.1 g protein

I cheated and had sugar alcoholic drinks and drunkenly ate tater tots last night & let me tell you guys......today was the HARDEST workout I’ve ever had. I know for sure I was brought out of ketosis and my body hated me today for the fun I had last night. I physically could barely get thru my workout. I was weak, tired, and on a major struggle bus even after taking my pre workout. Normally lifting arms I lift 15-20 lbs dumbbells and today 5-10 lbs bells was hard for me. Also I have been running 2 miles and could barely get to half a mile today! It made me so frustrated!! I now know the struggle and feeling people talk about when they eat carbs or off Keto for a day. Pure Yuck 🤢! Although I felt like shit, I still stayed and did what I could and pushed thru it! The grind doesn’t stop because one (or even a few) mess ups!
