Whipped up this somewhat green dairy-free matcha “nice cream” for St. Patty’s day 🍀 Packed with antioxidants, matcha tea should definitely be included to help detoxify your body 🙌🏼 might just help with that St. Patty’s day hangover some of you might be feeling tomorrow 😏
-1 can full fat coconut milk
-3 egg yolks (use whites for my candied pecans recipe!)
-2t matcha tea powder
-pinch of salt
-stevia or monkfruit (to taste)
1. mix everything but the eggs in a bowl & adjust sweetener to liking
2. place bowl over pot of boiling water and heat just to a simmer
3. whisk the eggs in a separate bowl and temper the eggs by ladling a little of the hot cream over the eggs and whisking to heat them without cooking them
4. add the egg mixture to the rest of the cream and cook for 2 minutes while whisking to thicken
5. pour into a baking dish and place in the freezer, stirring every 5 minutes until frozen
6. sit out at room temp 10 minutes before serving to soften
7. garnish with cacao nibs, candied pecans, coconut flakes

hey! lets talk more about keto metabolism.
basically being in ketosis is an alternative metabolic state compared the default which is to be in glycolysis (using glucose as primary source of fuel)
Of course I’m simplifying here, metabolism is super complicated and everything from hormones to sleep can alter your metabolism.
I had a patient recently who from poor sleep experienced increased cortisol which increased his blood sugar and reduced his ketones!
you will only be in ketosis under a limited carbohydrate supply, this can either happen through a low carb diet, fasting, or if you are type 1 diabetic without insulin.
protein can be gluconeogenic, meaning it can be converted to glucose so that’s the big different between keto diets and some low carb diets is that keto tends to be lower more moderate in protein.
you can build muscle in a ketogenic state but if you have a deficit of fat or compromised fat metabolism (eg carnitine deficiency), your body will break down muscle to release protein for gluconeogenesis
This is why keto is not the same across the board and different people who have different goals and bodies, need to be on a diet that is tailored to them.. do you have any questions for me? Met up with my aunt for lunch and to catch up. I got a Santa Fe salad with blacked chicken. I had them hold the tortilla strips but I ate the corn. Corn has always been one of my favorite foods. It’s nice to have on occasion. It’s not enough carbs for me to really care about today 🤷🏻♀️
