Yesterday I thought it was Thursday and I was confused why people were hashtagging #tacotuesday and today is Wednesday but I'm eating tacos now and THAT'S what counts. These smoky jackfruit tacos are super easy to make and a great way to include more plantbased foods in your diet!
You can find jackfruit on the cheap at most Asian/international markets, but I've also gotten it at some "regular" groceries. Look for green jackfruit, NOT jackfruit in syrup. Apparently green jackfruit can come in water but I've only found in brine. Give it a really good rinse and even a water soak + rinse if you have time because the briny flavor can be overpowering. In this recipe, though, any residual brininess almost comes off like lime juice. 😋😋
SMOKY JACKFRUIT TACOS (makes four tacos)
-1 tablespoon neutral oil (I used coconut)
-1 (14-15 oz) can of green jackfruit in brine or water, drained + rinsed
-1 teaspoon cocoa powder
-1/4 teaspoon chili powder
-1/8 teaspoon each garlic powder + onion powder + ground cumin + black pepper
-1/4 teaspoon Worcestershire sauce
-1/4 teaspoon liquid smoke (if you can't find any, use 1/4 teaspoon smoked paprika or more chili powder)
-1 teaspoon molasses or brown sugar
-8 corn tortillas, warmed
-Garnish such as shredded lettuce, avocado, and sour cream
Shred jackfruit into a small pan using your hands, picking out any large seed pods as you go. Add the rest of the ingredients and give a good stir to coat the jackfruit well. Turn heat to medium and only stir occasionally, so the jackfruit can caramelize and blacken on the edges. Serve in double-layered corn tortillas (because you're better than single layers of carbs and deserve good things) and garnish with whatever you like. #plantladyrecipes#tacoeveryday

🌮 Tuesday brought to you by @matthewkenneycuisine’s plant based Mexican spot, @barverdenyc. I‘ve posted about @doublezeronyc, his pizza concept next door and @plantfoodandwine in Venice. The man is taking over the world with his plant based empire and I have no complaints.
Mexican is one of the easier cuisines to eat #GF (ily corn tortillas) but good luck trying to find a dish without dairy. That’s where bar verde shines. The entire menu is vegan and their alt cheeses can fool even the most discerning dairy connoisseurs (think: cashew crema, butternut queso). The entire menu is vibrant & creative and the tacos are truly bomb. Between the jackfruit barbacoa, and mushroom carnitas, I promise you, you will not miss the meat. Ordered half the menu but some of my favs shown here are the maitake mushroom carnita tacos (back), truffle potato flautas (left) and spicy cauliflower tacos with butternut queso & salsa verde. (front n' center). Just a tip: the restaurant is on the smaller side, although very cozy (as is it’s sister double zero next door) not very comfortable for a big group. Great for date night or a small group dinner. #wellsideofeastvillage
Next up, I gotta try his newest venture, a plant-based (shocker) Mediterranean restaurant called @xyst in chelsea. I heard it’s the best one yet. Anyone been to any of the three new @matthewkenneycuisine restaurants in NYC? Thoughts?
We finally had a chance to try @vegatinos tonight! It’s an all #vegan taco stand with delicious food. We tried the tacos al carbon, jackfruit carnitas, chick’n tacos, and the new Al’s Special Burrito. Top it off, we were one of the winners of the #donatinos al pastor! It’s a @donutfriend glazed donut filled with carnitas - it was awesome! 🌮
Dinner consists of jackfruit tacos! 🤗😋 @traderjoes pulled jackfruit on their tortillas with spinach and rotel on top! I made a homemade bbq sauce with ketchup, mustard, ACV, molasses, and hot sauce! Soo good🌱🍅🌮
So because I kind of live in the suburbs (i guess you could call it) I don't frequently go to the awesome vegan restaurants in downtown Vancouver.. which kind of sucks.
HOWEVER I do find cute little places like this amazing restaurant with SO MANY vegan options.
They have some menu items that are already vegan such as these delicious "Jerkfruit Tacos" but you can sub any meat for jackfruit so there is a ton of variety! Isn't that amazing?!? 😍
