Some might think that’s where I spend most of my time and some days I do!😜.
I’m not sure where my love for cooking came along. Growing up we didn’t always have sit down dinners with busy hockey schedules and constantly being at the rink🏒.
When I first lived on my own was when I found myself in the kitchen having to learn. I have had some great influences along the way 🙏🏻 and by no means am I a great cook but I still love to try ☺️.
I love trying new recipes. Temperatures and timing are not always on my side but the kitchen is where I feel myself. It’s where I experience taste and what an experience that can be!😛.
This is how I know I am doing exactly what I am supposed to be, when I would rather look up recipes than the interest savings rate🤓. Last I checked it wasn’t much. Invest in your health❤️.
Don’t worry though, when you join my nutrition plan it doesn’t require you to be in the kitchen for hours or take up cooking. I teach you how to simplify your meal prep so you don’t spend hours in the kitchen😉.
I will, always, encourage you to try new foods though. Tonight’s was a first, SloppyJoes made from lentils. I couldn’t stop eating them! Erica!!! Portion Control🔶.
I have been craving Chinese for so long, since I've went on the low sodium diet...
soooo I made my own Chinese!
Half the calories, carbs, fat and sodium! Maybe even more.
I steamed some chefs blend authentic rice. And pulled out my wok and sauteed shiitake mushrooms, broccoli, onion, book choy, carrots, garlic and tempeh in light Olive and sesame oil. Added some crushed red pepper, Chinese five spice and last some crushed red pepper!
Sauteed in a very hot wok for about 15 minutes (I don't like mushy veggies, so I don't cook every long) serve with your favorite rice and you have a beautiful healthy Chinese dinner!! This recipe serves one 🕉️
1 cup broccoli florets
5 baby carrots diced
1/3 cup diced onion
2/3 cup shiitake mushrooms (golden)
2/3 cup tempeh chunked
1/4 cup diced bok choy
1/8 cup snap peas
1 tsp sesame oil
1tbsp Olive oil
3 cloves garlic minced
1tsp low sodium soy sauce or tamiri
Pinch of Chinese five spice
Fresh cracked pepper
Pinch crushed red pepper

You may or may not know that I’ve been doing a workout program. In 21 days I lost 8 lbs. and 12 inches. Just by doing 25-45 minute workouts, clean whole foods, a nutritional shake, and being part of an online accountability group.
If it wasn’t for my coach and my online accountability group I would have given up. Thanks to their support I was able to push through and stick to this plan, this is the first time I’ve ever started a workout program and finished it!
Because of this, I want to pay it forward! I’ve decided to become a Beachbody coach and help others the same way that my coach has helped me! My coach is currently running a Spring To Summer group to help us get ready for bathing suit season. She has selected me to invite 3 of my friends and family to join her group.
