This Easter Sunday, my family are coming for our first proper ‘special occasion’ lunch (we’re not religious; the special occasion is that it’s a bank holiday and there’s an expectation to eat lots of chocolate). I have been agonising about what to cook because if anyone knows my mum, she is the queen of amazing meals that have multiple courses and themed decorations, so I want to do her proud. But I think I’ve cracked it. It might take all of time and my sanity to make, but I’m going to try my best. And with work saying today that the office will close for a half day on Thursday next week, well, that is precious kitchen time that I needed in the bank and ready to be spent!

Chickpea Pot Pie with Flaky Biscuits to tuck into 💕
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup refined coconut oil, room temp
3/4 cup cold plant milk
2 cups potatoes, peeled and diced small
1 cup carrots, peeled and diced
1/3 cup olive oil
1 small onion, diced
2 ribs celery, sliced
2 cloves garlic, minced
1/2 tsp dried thyme
1/4 tsp dried sage
1/2 tsp salt
1/2 tsp ground black pepper
1/3 cup all-purpose flour
1 1/2 cups vegetable broth
3/4 cup unsweetened plant milk
1- 14 ounce can chickpeas, drained and rinsed
1 cup frozen sweet peas
1 cup frozen sweet corn
Start with the biscuits. In a medium sized bowl, sift the flour together with the baking powder and salt. Cut in the coconut oil with a pastry cutter, or use your hands to squeeze and mix the oil into the flour. You're aiming for the coconut oil to be broken up into pea sized pieces - these help with making the biscuits flaky. Add in the plant milk and stir just until combined. Over mixing will get you tough biscuits. On a lightly floured surface, pat out the dough about 1/2 inch thick. Using a biscuit cutter or a drinking glass, cut out biscuits. Try to get each cut as close to the next as possible to get as many biscuits as possible. With the remaining dough, gently press it back together and pat down to cut remaining biscuits (these are never as pretty as the first ones, it's okay.) Set biscuits aside for later.
Preheat the oven to 475 degrees F.
In a small sauce pan, cover the potatoes and carrots with water. Bring to a boil over high heat; once boiling, reduce heat to medium and cook for 5-8 minutes or until BARELY fork tender. They shouldn't be completely cooked, they will finish up in the oven later. Drain and set aside.
In a 10 inch cast iron skillet over medium high heat, heat the olive oil. Add in the onions and stir often for about 5 minutes until the onions are softened. Continued in comments ⬇️
