Creamy Horseradish Sauce!!! I love horseradish sauce but the store bought kind usually has vinegar along with other pesky ingredients like citric acid, cane sugar, etc. This version is so easy to whip up at home and it is soooo similar to the original!
- 1/2 cup cashew butter*
- 1 garlic clove
- Juice of 2 lemons
- 2 tsp maple syrup
- 1/2 cup diced horseradish, peeled
- 1/2 cup diced zucchini, peeled
- 1/2 cup water
Blend everything together until smooth and creamy! This makes a strong horseradish sauce, so you might want to start with less horseradish and find the right amount for your palette! Makes 2 cups. *Can substitute 3/4 cup cashews in place of cashew butter.
Enjoy, y'all! I can wait to make some sweet potato fries for dipping into this bad boy.
Need some egg inspiration? Add some Gold’s to your mayonnaise to make zesty deviled eggs. Slice boiled eggs in half. Mash egg yolks and add horseradish & mayo. Pipe into egg whites. Garnish with chopped chives.
Horseradish: one of the finest wild ingredients you will ever find, hard to seek out at this time of year but punchy as hell as all the goodness has sunk in to the root over winter. Sinigrin, the volatile oil in the root is at its peak which delivers the punchiness we all love so much. #wildfood#horseradish#foraging#huntergathercook
