I’m proud of this baby!! I’ve never made carrot cake or egg custard before and it’s safe to say that I really should make them more often! It was so tasty.. Let me try to explain the taste. Imagine your mouth after you’ve had your delicious meal but still feel like something is missing. You don’t know what. Then you take a spoonful of the carrot cake and the egg custard simultaneously. The cake dissolved in your mouth releasing the flavours packed in it; cinnamon, carrot, vanilla and you close your eyes. You’re on a different planet. The custard then reaches your taste buds; it’s creamy, smooth, velvet taste just takes over. Then you swallow. Slowly. To savour every last moment and taste in your mouth. You open your eyes. And guess what? You’re only one bite in. There still a few more bites of such pleasure.
Yes. That feeling.

Unhealthy is only unhealthy if you don’t balance your good and bad.
Imagine one winters evening, you are tired and have deadlines to meet, and there’s not enough hours in the day.. then this beautiful dish pops into mind. You can literally multitask. Whilst it’s cooking, you can be doing your final touches on that report that is due in the next hour.
The key to my dauphinois is let them cook for ages. I don’t have time wash, cut, boil then layer brittle potatoes layer by layer. It’s just not necessary!
The best thing to do is just wash, cut, wash again then do your layers. Add plenty of cream because that’s what’s going to allow your potatoes to cook through. Make sure you cover your Pyrex dish with foil so that the top layer doesn’t burn and to allow the heat and flavours to reduce and infuse every last potatoe😍😍 This is a perfect dish for sharing!

When you spend all day studying, you cook yourself what you can when you can😂
Whatever you want to call it. It’s quick. It hits the spot.
So one thing I discovered was that leaving the skin on the vegetables we eat gives you a lot more nutrients and vitamins than peeling it off. Unless my potato skins are growing babies, I don’t like to peel them. I do the same with carrots, tomatoes, cucumbers and we could really be here all day!
Research the benefits of the skin of each fruit or veg you eat. I hope I don’t catch any of you munching on a banana peel. That will just be a different level of.. weird!
Dish: Skin on oven baked potato stack with pan fried beef strips, boiled sweet corn and a tomato and spinach salad. 😋
