I have quite literally traveled across the country for this salad!
I tried it first in Chicago and have gone twice to Arizona to eat it. It’s the Macho salad with fresh pulled chicken, avocado, tomatoes, goat cheese, corn, almonds and dates! It’s the best salad ever. Plus we tried the famous artichokes this time which were also amazing! Servers had good knowledge of gluten free (get it without croutons) all the times I’ve gone.

Spaghetti squash has easily become one of my favorite substitutes for pasta, and I’d argue it even tastes better🙃 Homemade sauce to go with it was made up of lots of veggies (spinach, tomatoes, bell pepper, olives) and ground turkey, paired with some greens and my favorite dresssing (still green goddess🤷🏻♀️)
The blue skies today in WA have me looking forward to all of the hiking that’s headed my way this spring!! The thoughts are definitely helping me get through finals!

Ok so I'm a horrible photographer 😂 but this salad is like the only thing I can make and it's delish!!!
2 cups mixed greens
1 cup roughly-chopped kale
1/2 red onion
Pan-fried chicken tenderloin (1 lb)
1/4 cup crumbled feta cheese
Heirloom tomatoes (which tonight I didn't add, but they're usually a staple here!)
1/4 cup olive oil
3 tbsp balsamic vinegar
1/2 tsp sea salt
Cracked black pepper
1 tsp lemon juice
Oregano to taste
And I am a HUGE bread lover, so we had fresh sliced baguette with more olive oil and garlic. 👏🏼👏🏼👏🏼 And now on to a big scoop of peanut butter fudge ice cream for dessert! 🍦

I usually don’t write a testimony regarding the effects of some product even if it has helped a great deal. However, I have had the challenge of a major disease at least three different times covering a span of 33 years.

🥑 🍞 Avo toastie alongside homemade miso soup served 💨shteeeamin’ 💨 hottt 🔥
Miso soup: cubes of plain firm tofu , scallions, sliced mushrooms, matchstick carrrots & a good dollop of miso paste ( I had to keep adding more at the end, srsly don’t hold back!) into a large pot of water & bring to the boil. Usually miso has some seaweed going on in there but I used spinach and also added frozen edamame & some broccoli to be used up too! Just realised both of today’s posts are yesterday’s eats. 🤷🏻♀️ but now I’m in the mood for more miso & am v.glad I don’t have to go cooking tonight 🙃 #yaywooyay
Check this out! I met this guy working as a barista @powerplant_cafe and he told me he was off to join @seashepherd a couple of days later. I told him my monkeys love what Sea Shepherd supports and they would love to join him on the adventure. So so wonderful to get a photo ❤
So I made this homemade kale pesto pasta today and had it for lunch at work and dinner. Took about 7 min. to make and was absolutely the bomb!🍃💙 Kale really is the best for you and I know that a lot of people don't like it at all, I love it personally, but if you are struggling to get greens in you don't have to eat salad everyday. You can add it to smoothies, pasta, pesto, potatoes, nachos, stir frys, soups, and etc. It's all about what works for you.
•Bunch of kale (just the leaves) •Coconut oil lots of it (or any oil
you have) •tiny bit of sea salt or regular whatever works • some onion
Then just blend away in whatever blender doesn't have to be fancy. After that just add it to cooked noodles.
