Sautrday stroll through my favorite Farmers Market, and in for a treat with some delicious homemade fresh guacamole...Mexican style.
Our Maple Balsamic is extremely versatile, and contains just the right amount of pure maple syrup! Whether you’re glazing bacon or opting for a vegetarian dish like the one below - you’ll be hooked once you try it!
Yield: 2 servings
1 Japanese Sweet Potato
1 cup Quinoa, dry
1 tsp GroundCinnamon
2 tsp Maple Balsamic Vinegar
1 tbsp Extra Virgin Olive Oil
Begin by boiling two cups of water with one cup of quinoa. Once boiling, turn down to a simmer and cook covered until all water has been absorbed (about 15 minutes).
Preheat oven to 400F.
Meanwhile, prep veggies. Begin by chopping sweet potatoes into cubes. Place on baking sheet, drizzle with extra virgin olive oil, maple balsamic, and cinnamon. Cook in the oven for about 45 minutes, or until desired doneness.
At the same time the sweet potatoes are cooking, boil beets in water for 45 minutes. Once beets are finished, peel the skin (it should come right off) and chop.
Assemble bowls with quinoa, sweet potatoes and beets. Drizzle with any remaining maple balsamic and oil - enjoy!
