'Eggs Benny Salad'
This is today's odd looking lunch concoction! Started out planning to make egg on toast and ended up with this beaut! May sound strange but is was very tasty and filling.
To make it I:
1. Put an egg on to boil
2.Warmed some vac-pac beetroot and leftover new potatoes in the microwave
3. Sliced some spring onion, ham and cucumber then added them to the beetroot and potato
4. De-shell the egg and plonk on top
5. Add a sprinkle of salt and pepper then drizzle with hollandaise 💛💛💛
The hollandaise (swipe!) was shop bought from Sainsbury's, it's gluten free, delicious, and keeps well in the fridge! Perfect when you want to rustle up something a little more fancy! .
Full disclosure: this was meant to be a runny egg but I forgot to set the timer. Lol. Such a novice. Happy hump day everyone!

Chicken and prawn substituted with courgette and carrot noodles. And just as tasty! .
2 litres chicken stock
300g boneless and skinless chicken thighs, chopped
300g raw king prawns
4 boiled eggs, peeled and halved
150g mushrooms, sliced
150g pak choi, shredded
1 sweet pepper, sliced
2 medium carrots, spiralized
1 courgette, spiralized
1 chilli, sliced
1 inch piece of ginger, grated
3 garlic cloves, crushed
4 tbsp soy sauce or liquid aminos
1 tsp fish sauce
1 tsp Chinese five spice
1 tsp coconut sugar .
Add the chicken stock to a pan and bring to the boil. Add the coconut sugar, Chinese five spice, fish sauce, soy sauce, garlic, chilli and ginger and simmer for around 5 minutes to merge the flavours. Add the mushrooms, peppers and chicken thighs and simmer for a further 10 minutes (depending on size of chicken chunks) until cooked through. Add the king prawns and pak choi and cook for a further few minutes. Place a portion of spiralised courgette and carrot in a soup bowl then ladle some broth over the top. Add a halved boiled egg on top and serve!

If you are celiac, you cannot get your sandwich toasted as it shares the same surface as other breads. Also, they do offer plant based sandwiches as well!

Today bowl is mixed greens topped with watermelon radish, slow roasted sweet potato, shredded tumeric chicken, sprouts and my homemade coconut butter garlic feta 😥😳. I drizzled everything with coconut vinegar and 1tbsp of maple syrup. (Gives a salty sweet taste to the salad)
Food, dude. I’m ALL ABOUT IT! Honestly, I could spend ALL DAY EVERYDAY just cooking & making messes in the kitchen. Ask my husband, he knows 😏
However, I’m embracing a season of BLAND BORINGNESS with food. It’s so foreign to me it deserves made up words to describe it. And just when I thought I’d given up all that I can bare, my body demands I make even MORE restrictive changes.
I’ll never forget what I wrote down in my journal shortly after being diagnosed with Celiac Disease. I remember writing about my new LIMITS this disease forces me to obey, yet how much FREEDOM I was discovering within those limits. And all this time I thought limits were rules forced upon us to suck the fun out of life..I’m learning that limits are there for a reason, they keep us safe, OUT of danger, out of harm.
FREEDOM is the focus for all areas of my life during this season so it only makes sense to choose that perspective here in this season of embracing limited food options. I have FAITH that this too shall pass. I am waiting in EXPECTATION for what’s about to happen. MIRACLES will result.

Here’s another recipe for Veggie Tofu Scramble similar to the one I shared on IG Stories this weekend. Loving how easy it is to work with tofu. Veggie Tofu Scramble
1-2 tablespoons extra virgin olive oil
1 small onion, chopped
2-3 garlic cloves, minced
1/4 cup red pepper, chopped
1 container extra firm tofu, pressed and crumbled
1 teaspoon chili powder
½ teaspoon turmeric
½ teaspoon cumin
Sea salt and black pepper to taste
Fresh cilantro, chopped (optional)
Heat olive oil in a large rimmed skillet over medium heat. Sauté the onion, garlic, and chopped red pepper until soft and translucent, 3-5min. Add the crumbled tofu and stir.
Add chili powder, turmeric, cumin, salt, and pepper and mix well making sure the spices evenly coat the tofu. Let cook for another 2-3min or until tofu is hot and begins to brown. Plate, serve and enjoy! 👌🏻🌱🌟
