This is all of my friends favorite meal! They request it every time they come over.

Vegetable Saffron Stew

Ingredients

2 tbsp extra virgin olive oil
1 medium yellow onion, diced
4 cloves garlic, minced
2 tsp cumin
2 tsp cinnamon
Salt and pepper, to taste
1 lb. sweet potatoes, peeled and cubed
1/2 head of cauliflower, cut into florets
2 cups vegetable broth
1 15-oz. can diced tomatoes
Pinch of saffron threads
2 medium zucchini, diced
1/2 preserved lemon, finely chopped
1 cup green olives, pitted and chopped
2-3 tbsp fresh parsley, chopped
Slivered almonds, for garnish

Instructions

1. Heat the oil in a Dutch oven or heavy-bottomed saucepan over medium heat. Add in the onion, garlic, cumin, and cinnamon. Sprinkle with salt and pepper. Sauté for 5-6 minutes or until the onion is soft. Stir in the sweet potatoes and cauliflower and cook for 3 minutes more.

2. Pour the vegetable broth and diced tomatoes into the pot. Add the zucchini and a large pinch of saffron threads and stir. Bring to a boil, and then reduce the heat to simmer and cover. Cook for 15-20 minutes until the vegetables are tender.

3. Remove from heat and stir in the preserved lemon and olives. Garnish with parsley and almonds to serve.

You guys, guess what we added to our waffles this morning. Zucchini! And guess what else, they tasted just like regular waffles. Extra veggies 🌱🥒 first thing in the morning is my type of breakfast.

Anyway here is the recipe
🍃1 cup oat flour
🍃1/2 cup almond milk
🍃1/2 tsp baking powder
🍃1 egg
🍃handful of spinach
🍃1/2 cup shredded zucchini (squeeze out the water)

To your blender add flour, eggs, milk, spinach and baking soda. Blend until smooth. Shred zucchini and fold it into the batter. Cook as per waffle instructions

French toast is so quick, just one egg whisked, bread dipped in and cooked on both sides in a greased frying pan. I mixed a drop of almond extract into some quark because almonds are the BEST. And I warmed a handful of cherries and raspberries in the microwave until soft and jammy and voila!

I tried this cake mix I found @igaaustralia this afternoon and if you have gluten free/ dairy free kiddos they are will worth trying. The cake is light and fluffy ☁️ and it comes with sprinkles!!! 🍝СПАГЕТТИ С ТУНЦОМ🍝

🙃Ингредиенты:
🕸
⭐️помидор 2 шт
⭐️твёрдый сыр 30-50 гр
⭐️базилик
⭐️чеснок 2 шт
⭐️томатная паста 2 ст л
⭐️тунец 180 гр
⭐️спагетти 150 гр
🕸
Как готовим?🤔
🕸
В кипящую воду отправляем спагетти. Варим до готовности. А этим временем.... На а/п сковороде обжариваем помидорки, чеснок. Добавляем тунец из баночки, томатную пасту, специи по вкусу и 200 мл воды. Тушим пару минут. 
Выкладываем готовые спагетти в соус, перемешиваем. Или подаём спагетти и соус отдельно, как это сделала я. И не забываем конечно же про сыыыыыр сыр 🧀. 🕸
💥Немного о ингредиентах. Спагетти! Мы используем безглютеновые спагетти, которые сейчас уже можно купить без труда. 🙈Из всей этой красоты Михаил ест у нас только макароны с сыром! Так как с рыбой не особо дружит, тем более с консервированной, а с томатами так вообще в ссоре😂. Рыбу можно использовать любую на Ваш вкус. Про рыбу ещё напишу чуть позже, а пока... 🕸

Paleo Steak Fajitas with a Kick

Ingredients

2 lbs. flank steak
1/3 cup extra virgin olive oil
2 tbsp Paleo Worcestershire sauce
1/4 cup fresh lime juice
3 cloves garlic, minced
2 tsp honey
2 tsp cumin
2 tsp chili powder
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp pepper
1 large onion, thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 tbsp coconut oil, divided
Avocado, for serving
Cilantro, for serving

Instructions

1. Stir together the olive oil, Worcestershire sauce, lime juice, garlic, honey, cumin, chili powder, red pepper flakes, salt and pepper in medium bowl. Pour half of the marinade into a separate bowl. In one bowl, place the steak and turn to coat. In the other bowl, place the veggies and toss to coat. Cover both bowls and place in the refrigerator to marinate for 1 hour.

2. Melt one tablespoon of coconut oil in a large skillet over medium heat. Add the marinated veggies and sauté for 3-4 minutes, until just cooked but still crispy. Remove from the skillet to a plate. Set aside.

3. Melt the remaining tablespoon of coconut oil in the same skillet and add the steak. Cook for 2-3 minutes per side. Remove to a cutting board and let rest for 5 minutes. Slice the meat into thin strips against the grain. Serve with veggies and lettuce wraps, topped with avocado and cilantro.============

Last night's dinner was a bit of a disaster. 
We were having Mexican bowls and Miss 7 asked to try some gluten-free tortillas and I said yes. The Fussy One decided he wanted one too once he saw them come out.

They both loaded their tortillas up and folded them up like a burrito and the hot meat sort of melted the tortillas and the entire contents spilled out onto their plates. Cue pissed off hungry children losing their shit. "I know! I have some Lebanese bread we could try instead!" The kids agreed. We scraped their now-sloppy burrito fillings off their plate and onto the Lebanese bread and started to roll them up like kebabs.

Last chance to salvage things involved a bag of corn chips we had. Great! They are happy with this option. Let's eat, now that my dinner is stone cold. We dug in... Now, I make my own Mexican spice mix and decided to add just a touch of extra chilli to see if I could get the kids used to a bit of spice. Turns out, it wasn't the best idea at 8.30pm when the kids were starving and close to a meltdown.

They both took one bite and flipped out over it being too spicy. They couldn't eat it. "Guys, just go and grab a Hulk muffin. They're cooling on the bench." I'd baked 24 of @superhealthykids green spinach muffins for lunchboxes earlier. While it'd be nice for them to eat dinner with us, at least they had some veggies with their muffins!

And that is the story of how I got the kids to eat baby spinach for dinner. 😒

Ingredients
🥥3/4 cup coconut flour
🥥3 eggs
🥥1/2 cup mashed ripe banana
🥥1/2 cup steamed and mashed butternut squash
🥥1/4 cup coconut oil
🥥1 tsp Ceylon cinnamon
🥥1/2 tsp turmeric
*Optional 1 tsp baking soda*

1️⃣⃣Preheat oven to 350F
2️⃣whisk together the eggs and all the wet ingredients
3️⃣add in the flour, cinnamon and turmeric
4️⃣let the batter rest for 5 -10 minutes, this gives the coconut flour time to absorb all the liquid
5️⃣spoon batter into a mini muffin tin and bake for 25 minutes.
6️⃣let muffins cool before serving and store in an airtight container in the fridge

I’m doing my best to make sure the kids don’t have the same old thing in their lunchboxes but I think these might just become a staple. We’ll sample These with different toppings.

I used Doves Farm GF Bread flour mixed with a generous helping of grated parmesan. Rolled it out, sprinkled with pumpkin seeds, sunflower seeds and a sprinkle of Himalayan pink salt - gently rolled again over baking paper to press in the seeds and baked for 15-20 mins and cut into cracker squares. •

She doesn’t know it yet, but it is an incredible blessing to have great grandparents. Mine were the most influential people I’ve ever known and Harper is fortunate enough to have 8 of her great grandparents! Technically speaking she has 13 but 5 of them are estranged and or live far away. •

🍇ПЕСОЧНЫЕ КОРЗИНОЧКИ С ТВОРОЖНОЙ НАЧИНКОЙ🍇

Нам понадобится: 🦋для теста:
🔅мука из зеленой гречки -200 гр 🔅масло сливочное - 100 гр 🔅яйцо - 1 шт 🕸
Как готовим?🤔
В миску насыпаем муку, добавляем масло (я предварительно немного растопила в микроволновке) и яйцо. Тщательно перемешиваем. Должна получится густая однородная масса. А заааапах!🤤Отправляем тесто на холод минут на 20-30 (балкон, холодильник и тд). Пока тесто отдыхает, готовим духовку. Выпекать будем при 200 градусах, поэтому можно начать разогревать.🔥
Достаём тесто, формируем небольшой шарик, раскатываем, делим на части и выстилаем в форму. Я делала лепёшечки стаканом и выкладывала в форму. Так как у меня формы силиконовые, принцип пельменницы мне не подошёл, да и узнала я о нем чуть позже😂. Далее отправляем наши корзиночки в духовку на 10 минут! Через 10 минут достаём и радуемся🙈🤗. 👌Советую тесто раскатывать частями, что не подсыхало,иначе будет сложно застилать форму - тесто ломается. 🕸

🔅творог агуша, банан -для Михаила
🔅творог обычный, цукаты, немного сиропа, орехи -для мужа. 🔺НЕ ЗАБЫВАЕМ - орехи не рекомендованы детям до 3х лет. 🕸

🦋Доброе утро! Совсем недавно я познакомилась с песочным тестом, приготовленным с использованием муки из зеленой гречки! 🦋Все бы хорошо и вкусно, НО  в процессе приготовления столкнулась с некоторыми трудностями. 🤷‍♀️И так как я новичок в этом деле, решила полистать соответствующую литературу 📚и нашла несколько советов как же подружиться с песочным тестом и облегчить себе жизнь. Хочу с Вами поделиться. 🕸
🍩Как выстилать тесто в форму, чтоб оно не прорвалось? Для больших форм ➡️ раскатываем, помещаем на скалку, переносим на дно формы, закрываем форму, отдельно добавляем бортики (жгутик из теста распределяем руками по бокам). 🕸
🍩 Для маленьких формочек➡️ переносим раскатанное тесто на скалке к формам, застилаем их сверху, кисточкой распределяем тесто в углубления, прокатываем скалкой поверх формы. (принцип советской пельменницы)

🍩Что делать чтобы тесто не прилипало? Используйте бумагу для выпечки или фольгу, так как дополнительное добавление муки может сделать тесто более грубым.

🍩Как выпекать в глубоких формах? Для того, чтобы края не соскальзывали и форма осталась неизменной используют крупы (рис, бобы), их насыпают в форму в виде начинки и недолго выпекают, затем удаляют и выпекают до готовности. Начинку выкладывают на бумагу.

🍩Дополнительное применение песочного теста, а именно лепёшек - основа под мягкий бисквит. 🕸
🍩 Как хранить? Тесто или готовые изделия можно упаковать в фольгу и хранить в холодильнике дней 10, а то и две недели. 🕸
И все-таки знания облегчают жизнь!🦋

I just made a beet quinoa salad and it is just as good as it looks! I used 1 cooked beet, 1 package of rice/quinoa (about a cup), 1/2 of a lime, 1/4 cup of walnuts, and a couple of pinches of salt and pepper! Hopefully you can make this super easy dish! Really simple #kidapproved #lowkidslunches. They’re all getting similar but different lunches with something savory, something salty, and something sweet. The granola is a lower sugar variety compared to most and the greens (swipe 👉🏻) have nothing on them because that’s that child’s preference 🤷🏼‍♀️. Yes, my kids  sometimes eat #piratebooty and other normal kids snacks!

Breakfast
|| millet: a naturally gluten free grass seed that can be cooked like a grain and gives you that major cozy carb hit in the morning. I try to keep millet in rotation because it is high in magnesium, prebiotics and is a nice textural change from oatmeal. personally I think it tastes weird if not cooked in this manner, so if you try it out make sure to use the “risotto method” and cook it until it’s extra creamy! ||
millet porridge, raspberry chia jam, walnuts, bloobs & bee pollen.
➕soak millet overnight, rinse and cook like you would rice (2 parts water to 1 part millet). increase the water if not soaked. once millet has absorbed all the water, add in about 1/4c milk of choice and slowly stir it in until it absorbs. repeat this a few times (3-5) until millet is super creamy. you can also add a pinch of sea salt, shake of cinnamon, some mashed banana and vanilla which I highly suggest.

Dinner tonight is vegetarian soup (with the green beans picked out so she will eat it all without hesitation 💁🏻‍♀️) Although I am blessed beyond words that Harper isn’t a picky eater she does have some foods she just doesn’t care for like any other kid. Specifically green beans and lettuce. I’ll accommodate her disdain for them for now, because let’s be honest, some arguments aren’t worth the paper to write ‘em on.

There are so many delicious kid-approved alternatives that are often a lot healthier, too. We like the look of these cauliflower herb flat bread sticks! The recipe has a vegan option as well. Reaching my 40s I’ve had to put behind me pizza and pasta nights and focus on more healthier alternatives to enjoy such meals and this CAULIFLOWER HERB FLAT BREAD is one of them. I’ve seen on instagram so many times cauliflower crust pizza that it dawned on me why not make cauliflower bread sticks?
I hope you give this a try! You can serve it with a tomato chutney or on its own. I was very fortunate to be sent a bottle of @redduckfoods Curry Ketchup to try from @purenaturalsandorganics (which is the sauce in the photograph) and all I can say is OMG. Put it this way, my daughter licked the bowl afterwards which was the funniest thing to see! The recipe is on the blog and both paleo and vegan options are available.
