Ok lunch, I see you 👀 Had an amazing final session with a client this morning after working together for six months. We talked about listening to hunger cues and cravings instead of counting the hours since the last time you ate or counting calories. Honor what your body wants and when it wants it! I made this caesar salad for lunch today and initially pulled out some aged goat’s milk cheese to serve as the parmesan cheese. Then I thought about it and realized, I just don’t feel like cheese today. I feel like eggs! And so eggs it was. Simple as that. 🤗
My cravings have changed over the years as I’ve transitioned to eating whole and real foods. My sugar cravings (hello candida 👋🏼) fell away and afterwards I was able to listen to what NUTRIENTS my body was craving vs. thinking about calorie intake. GAME CHANGER. 🙌🏼 Another game changer are these cinnamon and turmeric sweet potato “croutons”... check out my story for how I made them.
DINNER: I needed a quick and healthy meal tonight, so I baked two fillets of mackerel and boiled up some frozen veg, then towered it on top of rice. Once it was cooked, I seasoned the fish with chilli sauce 🌶🍽

Genius' soft brown farmhouse loaf was the chosen vessel for my lovely homemade chips. It did the job but it wasn't great.

Had my chip butty alongside M&S mini GF chicken kievs which were INSANE 😍😍😍 they are part of the Christmas party range so sadly not available any more (these had been frozen) but we'll be buying more come December!!
This is ‘quisotto’. I thought I had risotto rice but no...so I had to improvise with quinoa and here was the result! A quisotto with peas, asparagus, spinach and broccoli with lemon zest, white wine and Parmesan.

I used some @sainsburys taste the difference stir fry veg & added some chopped spring onion, to that I added @tildarice new super grains garlic and ginger brown & black rice and a splash of @kikkomanuk gluten free soy sauce..
Pan fried seabass in @lucybeecoconut coconut oil & add soy sauce at the end..

It’s a bit cloudy and overcast today, which has me craving something warm. Unfortunately, I didn’t plan much this week in the form of meal prep, but one recipe I love (and I may have to make again this weekend) is my Kalua pulled pork. It’s warm, nourishing and delicious. And super easy in your slow cooker or Instant Pot. But let’s be honest, I *really* love it because it reminds me of the Hawaiian islands - and where I’d rather be on a cloudy and overcast day. 😉🏝 (recipe in the archives).

This beauty resulted after juicing a variety of fresh vegetables. This is like a pill in a glass. Nature is powerful. Take cilantro for example, the power it has to detoxify is huge. But why don’t we hear about it, why don’t our doctors tell us this? Because cilantro isn’t a billion dollar industry!🤛
Here’s what a two gluten free and lactose free low FODMAPers eat in a week 📆🧐🥦🍌🍓(not elimination phase FODMAP FYI) 99% of everything here is from @morrisons with two @tescofood items sneaked in! 🤓 Firstly, no I am not a mini egg addict despite having just bought a kilo or so 🥚 I’m just stocking up as I’m gonna be doing a lot of Easter baking this week 🍰 Also, I finally found the awesome @moo_free_chocolates Easter egg you guys recommended for me to get Mark! Here’s what our meal plan for the week is looking like...
• @nutribrex and ginormous monster strawberries with @almondbreeze milk
• @warburtonsgf tiger bread sarnies with Morrison’s gluten free crumbed ham
• gf tiger bread toast with ham, poached eggs and df hollandaise
• @scharglutenfreeuk fresh tortellini with homemade loFO passata pasta sauce and Spinach
• Satay chicken with gluten free ribbon rice noodles and bean sprouts (they were sold out of bean sprouts 😑)
• Low FODMAP carrot and coriander soup
• Homemade gf and loFO KFC chicken thighs and mustard mash
• @tescofood gf fish cakes with roasted butternut crinkle fries and steamed broccoli

Decided to try something new for breakfast this morning—a sweet potato and Brussels sprout hash with a fried egg! It was really good, I love trying new things, and will definitely be making this again! Have a great Tuesday everybody!!
QUINOA STIR-FRY ✨ I get asked a lot about healthy and warm breakfasts as an alternative to smoothies. This quinoa and asparagus stir-fry will do the trick and takes 5 minutes to make. It also makes a great lunch or dinner! I freaking love versatile and easy meals 💛 All you need is leftover quinoa (or brown rice), two pasture-raised eggs (I used @vitalfarms), and vegetables! I sliced up asparagus and flash boiled them (2 minutes) before adding to the pan along with leftover butternut squash and sweet potato “rice” from my @modelmeals delivery. You can make the same by adding pre-cooked butternut squash or sweet potato to the stir fry or try your hand at ricing it in your food processor beforehand and use in other meals that week 😉
To DO IT 👉🏼 heat a non stick skillet (I use a copper one) and add a tablespoon of olive oil. Add your quinoa to heat for one minute. Add in any precooked veggies + some coconut aminos and stir in for two minutes. Add in eggs and stir to scramble in with the quinoa and veggies. Turn off the heat, add pinch of salt + coconut aminos to taste. Stir again and serve in a bowl. Add avocado to take this to the next level 🙌🏼

Meal prep for this week 🍚 brown rice and spicy teriyaki cauliflower! • Break apart one head of cauliflower - Set oven at 450 - lay cauliflower on aluminum foil - spray cauliflower with olive oil and place in the oven for 20 minutes • Sauce - one tbsp of sriracha, 2 tbsp of honey, 1/2 cup of low sodium soy sauce, and one tbsp of brown sugar • Drench cauliflower in sauce and then bake for 10 more minutes 😋 I found this recipe off of Pinterest! #GlutenFreeEats
