🥒☘️Zucchini Leek Soup, you are the creamiest vegan soup and I love you. You seriously won’t believe there are only 7 ingredients and dairy isn’t one of them! This is a staple in my home and I always make extra to enjoy over a couple days. Ingredients: 2 large leeks, 4 medium zucchini cut lengthwise and into half moons, 3 garlic cloves, 1/4c EVOO, pinch of red chili flakes, salt to taste. Recipe: in a Dutch oven, heat EVOO and leeks over medium heat and sauté, stirring occasionally for 10 min, or until soft. Add the zucchini, garlic, chili flakes and salt, cover the pan and steam for 10 min or u til the zucchini is tender. Transfer the mixture to a high-powered blender with 2 cups water and blend until very smooth. Taste for seasoning and serve hot or cold. Since I have been posting little snippets on my feed about being more mindful about my nutrition and gut health I thought I would go into a little more detail in hopes of helping others out there too whom may be on the struggle bus.
Over the last 2 years I have really took a more focused approach on nutrition and fitness (as if you haven't noticed 😉) and what goes into my families bodies. Sometimes being healthy and eating healthy foods can still backfire. I knew I was lactose intolerant(we dont eat alot of dairy in our house to begin with) but aside from that I was bloated, gassy (TMI sorry), uncomfortable regardless of what I ate, had hormonal acne showing up on my jawline, and occasionally would have pains shoot through my stomach. SO with my professional background and passion for holistic, more nutritional based healing I decided instead of seeing a medical doctor to look into a functional medicine doctor. I did my research..I read articles, I studied YouTube videos..I knew what to expect going in. I chose Dr Zacharie Cole of Greensburg because of his passion for his job and his patients and I knew he had what I needed to get answers.
We had a consultation the first visit and he ordered a blood test that would use 5 blood samples on a piece of paper and the test was overnighted to a lab in Kansas with results back in as little as 2 weeks. Page 1 of my results are listed here and it is broken down into different food categories. My biggest shocker was eggs and egg whites..😢OFF THE CHARTS.. and I am still shocked because I was eating those every day (and I still crave them). Also, gluten, candida, sugar, yeast, corn, all things dairy (cows milk) are all intolerances I have to avoid and see how my body reacts. Basically I am trying to stick to a paleo based diet minus the eggs (which is a challenge) all while trying to eat according to my fitness meal plan.

Honestly, it's not hard to believe that I still looked like the photo on the left last year too. I just didn't let people take photos 📷 of me in a bathing suit after I saw that photo in July. Month three into using Arbonne and I'm telling you from the bottom of my ❤️ that Arbonne has changed my life by teaching me several things. 1️⃣ how to cook meals with easy peasy WHOLE FOOD recipes, 2️⃣ how to do an elimination diet (my doc approved) to see what foods were making me sick even after I excluded dairy and gluten 👏, 3️⃣ that I'm not alone in my health struggles b/c I have an Arbonne Facebook support group 👥, 4️⃣ I'm going to get my tummy better if I keep working at it, 5️⃣ that counting calories isn't necessary, 6️⃣ that nutrition is most important, 7️⃣ that any food can taste good with LOTS of seasonings, 8️⃣ PROBIOTICS AND FIBER ARE AMAZING b/c I'm feeling so much better now that I'm not living every day feeling like I have food poisoning 🤢, 9️⃣ and that NOT EVERY WEIGHT OR FOOD PROGRAM IS A SCAM. I was sooooo hesitant to try @arbonne but @arikastovall took the time to explain everything to me and guide me step by step. And this is why she is walking across stage with Arbonne 🎉🎉!! Does anyone else miss crunchy things when on a whole30? I do 🙋♀️! So eating what’s probably an excessive amt of plantain chips on my salads before my April Whole30. Oraganic romaine, buffalo chicken, avocado, carrots, and plantain chips topped with @tessemaes avocado ranch.

I’ll share my story:
I dealt with gut issues and full body inflammation for 5 years and would just breakdown sometimes because I couldn’t figure out what was wrong.
Since I work in healthcare, I did my own personal research I walked into my doctor’s office and asked for blood work for inflammation. Sure enough, positive! ✅
That led me to a Rheumatologist who did further work and found that I’m dealing with autoimmune issues. Here’s the thing, it’s typically hereditary and it DOESN’T run in my family. So why do I have it?
More research coming out finds the correlation between autoimmune diseases and gut health. Considering I get stomach pain and bloating easily I decided this was likely my why. I deal with guilt knowing I did this to myself 😔
The medications for autoimmune diseases are the same they use for those going through CANCER treatment. 😱 Yikes! My Rheumatologist agreed to let me skip medication for now and try an Immune System Diet.This means:
No gluten 🚫
No dairy 🚫
No added sugars 🚫
My symptoms (pain, bloating, swelling in joints, and acne) have calmed down about 80% since switching to this diet and although it’s REALLY hard to stick to it, especially in social situations, it’s totally worth feeling so good Physical and Emotionally again. 🙌🏼💗 Anyone else try this diet for autoimmune issues and have good success?

You can absolutely go out & pick healthier choices & if you are following container counts pick food items that fit with your containers.
When your plate comes take off the food items that doesn’t fit within your containers.
I love coming to Tranquility. Their menu choice for people like me who are #glutenfreedairyfree is amazing & my fav is they even have cake 🍰🤤 I just have to drool over the cakes right now since they don’t fit in with my nutrition plan right now! Don’t get me wrong it’s hard but I have #goals & willpower plus I can make a mean mug cake that does fit in my plan 👌🏻
No-bake paleo almond butter protein bars
👉🏼These bars are AMAZING and have no dairy, gluten, soy, grains, or refined sugar (& each bar has 15g of protein!)
For the Base:
1/2 cup @kingarthurflour coconut flour OR 1/4 cup @julianbakery paleo plant protein powder + 1/4 cup coconut flour
1 cup @justins almond butter, I used unsalted crunchy
1/4 cup + 2 tablespoons @maplegrovefarms pure maple syrup
For the Chocolate Top:
1 cup @paschachocolate paleo dark chocolate chips
1/2 cup @justins almond butter, I used unsalted crunchy
Mix all of the base ingredients in a bowl. Line a loaf pan with non stick paper or aluminum foil. Press the base into the pan to make an even layer. In a double boiler melt the chocolate chips. Once the chocolate chips are half melted, add the almond butter and melt until smooth. Spread the chocolate layer on top of the base layer. Refrigerate for 4 hours before slicing.
Meal prep Sunday...These egg muffins are my go to for a simple breakfast on the go during the week! •
This week I used @so_delicious mozzarella cheese, @bilinskisausage mild Italian chicken sausage, and some spinach! 🤤

Are you prepping for your Sunday Chicken Curry? 🥘
A staple in Indian homes, this is what weekend tastes and smells like to me. The whiff of frying onions with cardamom and cinnamon. 🌿
Sunday Chicken Curry
3 lbs boneless skinless chicken thighs and/or breast, cut into 2” pieces, (about 4 pieces per thigh)
2 cups thinly sliced onions,
2 tbsp ginger grated
1 tbsp garlic chopped 2 cups chopped tomatoes
6 tbsp oil
1 tsp cumin seeds
½ tsp turmeric powder
½ tsp cumin powder
1 tsp coriander powder
½ tsp chilli powder (this would make it medium hot, you can go less)
2 tsp salt (or to taste)
1 tsp garam masala powder
3 large yukon gold potatoes cut into 2” cubes (optional)
4 tbsp chopped cilantro
Aromatics - Cinnamon stick, green cardamom pods, black cardamom pods, cloves - 2 each
Heat oil in a heavy bottomed pot. When oil is hot, add the cumin seeds. Let sizzle for 10 seconds. Add the aromatics. Stir for another 30 seconds till the cinnamon unfurls.
Add sliced onions. Saute on medium high heat for 5 minutes, till onions are softened and slightly caramelized. Add garlic and ginger and saute for a minute.
Add the chopped tomatoes. Add turmeric, cumin, coriander and chilli powders and salt. Saute for 5 minutes till this mixture becomes soft and pulpy. It’s important you take time with this step because this forms the base of the sauce.
Add the chicken pieces and continue sauteing for another 5 minutes, till the chicken is opaque and releasing some of its own juices.
At this point, add the cubed potatoes, stir and add 3 cups of water (or more), enough to cover the meat and potato mixture.
Bring this to a simmer and turn heat to medium and simmer, covered, for about 15 minutes, stirring every few minutes or so.
Take the lid off, and give a good stir. Add garam masala and mix well. Turn off heat. Sprinkle with fresh chopped cilantro.
Last week I enjoyed all the food and drink that holidays and celebrations bring out! This week I want my energy back so I’m going to clean up my food and lay off the booze.

Because of my gallstone attack last night, I'm not eating anything crazy today. GF quinoa & chia wrap, garlic hummus, baby kale & spring mix salad, mushrooms, broccoli, vegan parmesan and some honey mustard. It's gonna be mostly all veggies for me for a couple of days to make sure I'm better.
