We’ve got some mung beans sprouting to life! We love them because they are full of vitamins and minerals that are easily digestible. Catch them while you can on the sprout life salad, the avocado toast, and some of our raw and cooked wraps too!
New Year, New Brownie. Today when I left the house I turned the heating blanket on for the cat. I think this is my mental equivalent because winter has me down & chocolate feels good. I met a friend for dinner on the east side and was met with such excitement when she told me they have an entirely gluten free menu! It was extensive and didn't feel in the slightest limiting! They served me a beautiful bowl of veggies with my guacamole because the chips are made in the same fryer as gluten items. I enjoyed the Slow Roasted Mojo Pork (a must try). FUN (and random) FACT FRIDAY 😜My dad, my sister, and I have all been diagnosed with Celiac Disease. Crazy, right?! So naturally, it's KIND OF OUR THING when we get together to find delicious gluten free eats. For my sisters birthday this year I bought her a gift card to a Gluten free restaurant in Cleveland and I have to admit I was super jealous of the gift I bought her cause WE AINT GOT NO GLUTEN FREE RESTAURANTS IN VEGAS?! Needless to say she went, she ate, she raved and I made it my mission to check this place out on my next visit.
Well TODAY is the day and ironically enough it is @CafeAvalaun 's October Fest Menu this evening and we placed our order two weeks ago 😂I AM SO EXCITED for our gluten free German dishes this evening. Bring on the pierogis & schnitzel!!!! #ItsAboutToGoDown .
Ice Cream Joy in Lakewood is aptly named and very gluten free friendly! They have so many interesting flavors (pictured here is honey roasted peanut butter cookie dough- gluten free of course!) and they have gluten free cones too! They were super helpful and cautious when I let them know about my allergy- and even ran next door to @fearsconfection where they get the hot fudge from, to verify it was gf for me (it is, and was 💯😍🍫) they also have everything clearly labeled and lots of #nutfree and #vegan options too. Honesty moment: have you looked at my posts and thought there's no way you could do THIS? 💭
An image that might not come to mind is the girl that stood on day one-- I was struggling a bit with the movement because I was 20 pounds overweight. I haven't worked about for about 7 months. My endurance was back at square one... and I actually fought back tears because I was overwhelmed at where I had landed myself physically.
You might not see the girl who was reading word for word from her cookbook LEARNING how to cook something that wasn't from a box, bag, or mix for the first time. You don't see the food I screwed up, burned, and dumped in the garbage.
See-- I could have given up that first week that things felt a little difficult. I could have thrown in the towel and LIED to myself that it DIDN'T MATTER.
The truth was... dude, I had been dreaming of CHANGE in my health for as long as I could remember. And I knew in that moment I had to work past these obstacles.
The one thing we can't deny is the body we walk around in. Literally. I couldn't go another day without taking action. I wasn't fooling ANYONE; not even myself. So day by day, week by week, month by month I KEPT MAKING PROGRESS. I learned, I grew, and I flourished in this lifestyle that was FINALLY benefitting me.
