I crave these everyday! The chocolate apple bites are SO EASY to make and not bad for you at all. Double tap if you are as obsessed with tart apples dipped in chocolate/caramel as much as I am.

Granny Smith Chocolate Apple Bites

Ingredients

1/4 cup lemon juice
2 Granny Smith apples
3 oz. dark chocolate, roughly chopped
2 tbsp walnuts, chopped
2 tbsp cashews, chopped
1 tbsp mini dark chocolate chips

Instructions

1. Wash the apples and pat dry with a paper towel. Use a tablespoon or melon baller to cut out small rounds from the apples. Place into a bowl with the lemon juice and enough cold water to cover. Set aside.

2. Melt the chocolate in a glass bowl in the microwave and stir until smooth.

3. Prepare a long sheet of wax paper on the counter. Drain the apple pieces and pat dry. Use a toothpick to dip the apple pieces into the melted chocolate. Place onto the wax paper. Sprinkle with toppings of choice. Repeat with remaining apples. If desired, place into the refrigerator for 30 minutes before serving.

This is the best low carb zucchini noodle dish I have ever had! YUMMMM.

Roasted Red Pepper Pesto with Zucchini Noodles

Ingredients

2 red bell peppers
5-6 tbsp extra virgin olive oil, divided
1/2 medium onion, diced
2 cloves garlic, minced
1 tsp paprika
1 cup frozen spinach, thawed
1/3 cup canned artichoke hearts
2 large zucchini, julienned
Salt and pepper, to taste
1 tbsp fresh parsley, chopped
Walnuts, for garnish

Instructions

1. Preheat the oven to broil and move the oven rack to the top position. Line a baking sheet with aluminum foil. Cut the bell peppers into quarters and remove the seeds. Place flat on the baking sheet with the skin side up. Broil for 12-15 minutes until the skins are blackened.

2. Place the blackened peppers into a paper bag or Ziploc and close. Allow the peppers to steam for 10-15 minutes to loosen the skin.

3. Meanwhile, heat one tablespoon of olive oil in a saucepan over medium heat. Add the onions and garlic and sauté for 8-10 minutes. Stir in the paprika. Turn the heat to low to keep warm.

4. Remove the bell peppers from the paper bag and gently peel off the skin. Place into the saucepan with the onions and add three to four tablespoons of olive oil. Remove from heat. Use an immersion blender to puree, or transfer to a blender. Blend until smooth, adding more olive oil if necessary. Add salt and pepper to taste.

5. In a separate pan, heat the remaining tablespoon of olive oil. Add the spinach and artichoke hearts to the pan and cook until the artichoke hearts are slightly browned. Stir in the zucchini, and then add your desired amount of the red pepper pesto. Toss to coat. Serve warm, garnished with walnuts and parsley.

Vegetable Saffron Stew

Ingredients

2 tbsp extra virgin olive oil
1 medium yellow onion, diced
4 cloves garlic, minced
2 tsp cumin
2 tsp cinnamon
Salt and pepper, to taste
1 lb. sweet potatoes, peeled and cubed
1/2 head of cauliflower, cut into florets
2 cups vegetable broth
1 15-oz. can diced tomatoes
Pinch of saffron threads
2 medium zucchini, diced
1/2 preserved lemon, finely chopped
1 cup green olives, pitted and chopped
2-3 tbsp fresh parsley, chopped
Slivered almonds, for garnish

Instructions

1. Heat the oil in a Dutch oven or heavy-bottomed saucepan over medium heat. Add in the onion, garlic, cumin, and cinnamon. Sprinkle with salt and pepper. Sauté for 5-6 minutes or until the onion is soft. Stir in the sweet potatoes and cauliflower and cook for 3 minutes more.

2. Pour the vegetable broth and diced tomatoes into the pot. Add the zucchini and a large pinch of saffron threads and stir. Bring to a boil, and then reduce the heat to simmer and cover. Cook for 15-20 minutes until the vegetables are tender.

3. Remove from heat and stir in the preserved lemon and olives. Garnish with parsley and almonds to serve.

Yields: 16 servings

INGREDIENTS:
- 1 ¼ cup creamy almond butter (cashew butter works well too)
- ½ cup coconut sugar
- 1 teaspoon baking soda
- 2 eggs
- 1 tablespoon vanilla extract
- 4 scoops Vital Proteins Dark Chocolate & Blackberry Collagen Peptides
- 3 ounces dark chocolate, chopped + more for topping
- 6 ounces roughly chopped fresh blackberries
- generous pinch coarse sea salt for topping

DIRECTIONS:
1. Preheat oven to 350°F and line an 8x8 (or similar sized) baking dish with parchment paper so that it overhangs the edges.
2. Combine almond butter, coconut sugar, baking soda, eggs, vanilla, Vital Proteins collagen peptides and dark chocolate in a large bowl. Mix until well combined.
3. Gently fold in blackberries then transfer the batter to the prepared baking dish.
4. Top with additional chopped dark chocolate and coarse sea salt.
5. Bake for about 25 minutes. 
6. Remove from oven and let cool completely before cutting into 16 small squares for serving.

This delicious  recipe has a "surprise" ingredient in it! I don't think you'll guess what it is.

Either way, this shake has been a morning staple for the past week as I finetuned the recipe. It's incredibly tasty and hits these amazing points in your mouth that makes it just .

When I started, I was inspired by these delicious dishes of marinated strawberries that you can easily find in Italy... drizzled with .

I've even had a sweet and thick balsamic drizzled over ice cream... what a treat!

So why not turn that into an outrageously tasty way to start your day 🤗 And then I paired it with the "mother of all almond butters" from ! Their maple almond butter is so freakin' good... I can just eat it out of the jar off a spoon for dessert.

It's certainly not overly sweet, but they nailed the perfect combo of sweet and saltiness to a "t". This flavor is just one of several that's frankly... the best almond butter I've ever eaten.

They've also got original, gingerbread, and cinnamon blends... which are equally !

👉 The Italian Job Protein Shake

1.25 chilled filtered water

1 serving vanilla protein powder

1.5 tsp balsamic vinegar

1.25 cup frozen 🍓strawberries

1 tbsp  maple

5 dashes pumpkin pie spice

Optional -- 1 tbsp collagen powder

KETO brownies with pistachio.

Wet ingredients: 
2 large eggs (lightly beaten)
1/2 C coconut oil
1t vanilla
1/2 C hot water

Dry ingredients:
1/2 C almond flour
1/4 C coconut flour
1/3 C cocoa powder
3/4 C erythritol
3/4 t salt
1T instant coffee powder (optional)
3/4 t baking powder
3/4 t xanthan gum (optional. If u prefers not to use it. It's ok the finish product is going to be a little more crumbly but still taste 👍. Toppings:
1/4 C Lily's chocolate chips or any keto friendly chocolate chips
1/4 to 1/2 crushed pistachio

Directions:
Preheat over 350 degree

1. Put coconut with hot water and vanilla together. When coconut oil all melted and not hot add to beaten egg. 
2. Mix all dry ingredients together. Add wet mixture to it. Mix well. Fold in chocolate chips.

3. Put mixture in 8x8 baking pan. Top with crushed pistachio. Baked in the middle rack for 20-22 mintues. Pay attention around 20 mins time and check for doness. Do not burn the pistachio.

4. Let it cool in pan.

Bet you didn’t expect a brownie post from me did you!? I not only baked these deliciously chocolatey brownies but yes I ate them too!!! Can you guess the secret ingredient!? Today was the much anticipated “re-feed day” of our 80 day program not to be confused with a cheat day although it kind of felt like one!

Today I strategically indulged in a bagel, brownies, butternut squash ravioli and a little extra fruit in additional all of my other food!

So what is this all about!? After 5 1/2 weeks of no processed sugars or white processed carbs the refeed day will act to replenish my body’s glycogen levels - the stored form of our body’s primary energy source - glucose. 
With these levels restored tomorrow morning I should be able crush leg day! 
For the remainder of this program I will enjoy my strategic refeed day once every two weeks!

This is all new to me! Not going to lie the brownies were delicious!

Bet you didn’t expect a brownie post from me did you!? I not only baked these deliciously chocolatey brownies but yes I ate them too!!! Can you guess the secret ingredient!? Today was the much anticipated “re-feed day” of our 80 day program not to be confused with a cheat day although it kind of felt like one! Today I strategically indulged in a bagel, brownies, butternut squash ravioli and a little extra fruit in additional all of my other food! So what is this all about!? After 5 1/2 weeks of no processed sugars or white processed carbs the refeed day will act to replenish my body’s glycogen levels - the stored form of our body’s primary energy source - glucose. With these levels restored tomorrow morning I should be able crush leg day! For the remainder of this program I will enjoy my strategic refeed day once every two weeks! This is all new to me! Not going to lie the brownies were delicious! Have you ever practiced a refeed day before? Not to be confused with a go wild cheat day but very intentional and planned? p.s. ITS REFEED DAY YALL 🙌🏻👏🏻🤤I'm not going to pretend that I'm the expert and really know what all the science is behind this {if you do know feel free to drop it in the comments}, but all I know is my trainer IS an expert and if she tells me I can eat chocolate 🍫 and some "dirty carbs" 🥖🥐🍞 and a whole lot more fruit today IM NOT COMPLAINING. And these {gluten-free} flourless brownies LITERALLY are to die for and I'm just excited to have chocolate in my mouth right now sooooo yeah. I'm trusting my trainer and the process ✌🏻and definitely enjoying these days and looking forward to the next one in two weeks!

Blend in blender these ingredients
. 
1/2 c almond butter
1/2 c cooked sweet potato 
1 large egg
6 Tbsp honey
1/4 c unsweetened cocoa powder
2 tsp vanilla
1/2 tsp baking soda

Bake at 350 for 25-30 minutes

This is approximately what I did- 
About 1/2 cup flour (a mix of almond flour and arrowroot) 
3 eggs 
About 1/2 cup coconut oil 
1/3 cup cacao 
1/3-1/2 cup coconut sugar 
1/2 capful of rose water 
Vanilla (as much as you like about 1 tsp)
Wisk together and throw in oven at 350 degrees for 15-20 mins. I used Adrien’s coconut vanilla frosting and then top with dried roses 
Yummy 🤤
