It’s a gyoza party part 2.
Got a little wild and made them colorful... naturally dyed with spirulina & turmeric.
Here are the ingredients:
Store-bought Gyoza (or wanton) wrappers or refer to recipe below
Homemade Gyoza wrapper:
2 cups all purpose flour
3/4 cup hot water
1 tsp salt
2 cups mushrooms, diced very small
1 cup carrot, diced very small
1 cup cabbage, diced very small
1 small onion or half a large onion, diced very small
2 garlic cloves, crushed
2 tbsp soy sauce
1-2 tbsp coconut aminos
1/2 tsp salt (if needed)
1/4 tsp pepper

Found a great way to use up extra clementines! Clementine Cake with the NYT recipe 🍊 🍰. Needs some planning ahead to simmer the clementines for a couple of hours before puree-ing. But easy otherwise and really yummy - bright, refreshing and indulgent! Gluten-free and dairy-free too without trying to be 🙌
Easy peasy lunch today was some pasta made out of green lentils + cauliflower + parsnip & my spinach almond ricotta with sundried tomatoes .

Spinach & almond ricotta
1 (14 ounce) package of firm tofu
1 cup raw almonds
3/4 tsp salt
4 tbsp nutritional yeast
1/2 tbsp garlic powder
1/2 tbsp onion powder
1/4 tsp pepper
3 cups chopped spinach
1/2 cup unsweetened almond milk

Having a vanilla protein mug cake for breakfast today. Recipe:
- 1 scoop @organifi vanilla protein (code RABBIT for 15% off purchase)
- 2 Tbsp @bobsredmill almond flour
- 1 Tbsp @ottos_cassava_flour .
- 1/4 tsp baking soda
- 1 large egg
- 4 Tbsp water
Mix all ingredients in a microwaveable cup/mug. Microwave on high for about 2 min (varies by microwave & dish).
Topped with @kitehillfoods almond milk yogurt, crushed almonds and bee pollen.

CREAMY VEGAN TOMATO SOUP

1 (29 ounces) can tomato puree
1 cup raw cashews
5 cups filtered water *divided*
1 red bell pepper, diced
1 yellow onion, diced
1 butternut squash (4 cups chopped)
3 cloves garlic
1 1/2 tbsp “no chicken” bouillon
1/2 tsp pepper
1 tsp salt (optional… if needed)

Here’s the easy peasy recipe.
Ingredients •@annieshomegrown or @immaculatebaking crescent rolls or biscuits (yep they’re both vegan)
•Crushed Garlic, pepper, salt and dried parsley or use “sizzle” from @convival_spice 😍
•1-2 tbsp melted vegan butter
1. Roll out dough into a snake shape (should make 6 larger ones or 8 bigger)
2. Place on a baking sheet lined with parchment paper
3. Brush generously with melted vegan butter, then sprinkle over crushed garlic, salt, pepper and fried parsley
4. Bake at 350 degrees for 7-10 minutes or until golden brown. ENJOY
