The scrumptious lunch I had today at Kasbah Moroccan Cafe in Old Town Portland, Oregon. Three lamb merguez sausages were smothered with a tomato stew and garnished with sliced green olives and parsley, accompanied by a fried egg with a nice runny yolk, and batbout (a Moroccan pita). It seemed like a layer of olive oil had been poured on the platter before the other ingredients were placed. Both the sausages and the stew were fairly spicy ... just how I like it. I sopped the tomato sauce and olive oil up with the batbout until my plate was nearly spotless! This dish is similar to the shakshuka I have had a number of times at Tasty’n’Sons in North Portland. Each one is awesome, but somewhat different ... you’ve got to try them both!
