You gotta finesse in the dining hall to be healthy AND eat interesting food! Here I made myself a healthy “nourish” bowl out of a few different things from each station. I used spinach, fajita chicken, chickpeas, feta, sauteed veggies, roasted sweet potatoes, and some chipotle dressing sprinkled on top! Keeping it clean and interesting in college😋

Tabbouleh is a Levantine vegetarian salad made of tomatoes, finely chopped parsley, mint, bulgur, and onion, and seasoned with olive oil, lemon juice, and salt. Some variations add garlic or lettuce, or use couscous instead of bulgur.

I’m having one of those Monday’s where we are super productive at the office and it feels 💯! Powering up with this big bowl of thick baby spinach, grated carrots, purple cabbage, almond slices and hemp seeds topped with my favorite @briannas_salad poppyseed dressing - and a side of avocado on @foodforlifebaking Sprouted grain toast (already ate the other half before taking this pic 😋) - hope you are all having a wonderful start to the week!
