The Best Steak Fajitas

Ingredients
For the Homemade Fajita Seasoning Blend
1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon kosher salt
1 teaspoon paprika
½ teaspoon sugar
½ taspoon onion powder
½ teaspoon ground cumin
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
For the Steak Fajitas
1 clove garlic, minced
1 recipe Fajita seasoning (above)
¼ cupplus 1 tablespoon olive oil, divided
¼ cup fresh cilantro leaves, chopped, plus more for serving
1½ pounds hanger, skirt or flank steak, halved crosswise
2 tablespoons butter
1 sweet onion, halved and sliced vertically
½ teaspoon kosher salt
½ red bell pepper, seeded and sliced into strips
½ orange bell pepper, seeded and sliced into strips
2 wedges of lime
1 avocado, pitted and smashed
16 warm flour tortillas
Instructions
For the Homemade Fajita Seasoning Blend
Combine all the ingredients in a small bowl. Store in an airtight container for up to 6 months.
For the Steak Fajitas
In a shallow bowl, combine the garlic, fajita seasoning, ¼ cup olive oil, and cilantro. Toss the steak to coat in the marinade, cover and marinade for 30 minutes.
Meanwhile, heat a 12-inch cast-iron skillet over medium-hihg heat. Place the butter, 1 tablespoon olive oil, and onion in the skillet. Season with the salt, stir, and cook until the edges of the onion are deeply golden yet still a bit firm, about 10 minutes. Add the peppers and cook for 5 to 8 minutes more, depending on how done you prefer them. Transfer the onion and peppers to a small dish.
Working in two batches, sear the steak on both sides for 3 to 4 minutes on each side. Transfer to a cutting board and let rest for 5 to 8 minutes before slicing into thin strips. Return the strips and any juices from the cutting board to the skillet, squeeze in the juice from the lime wedges, and cook for 3 to 4 minutes more. Remove from the heat and tent with aluminum foil to keep warm.
Serve on warm tortillas. Garnish with smashed avocado that's been mixed with a sprinkle of kosher salt and a squeeze of fresh lime juice. Top with Cotija cheese and more cilantro if desired.

MONKEY BREAD OATMEAL BAKE 🐵🍞 ... I need to go eat a carrot now or something because this was actual dessert that i just had for breakfast.. 💭 I always seem to come up with oatmeal bake ideas whenever I’m out on a walk, as was the case last week when i was stopped dead in my tracks as i thought of my all time favorite dessert as a child...MONKEY BREAD 🙉🍞🍌My mom and i would make some every Christmas Eve and eat almost the entire loaf or until we felt sick (whichever came first) and i am happy to say that i have found a healthier version. No dairy, no gluten/flour, no refined sugar, just oats, dates, and other natural ingredients. This was one for the books fellas, i hope you get to try it as well 💛

MONKEY BREAD OATMEAL BAKE 🍞🐵:
- 1/2 cup GF rolled oats
- 1/2 cup vanilla unsweetened almond milk
- 1/2 banana mashed
- 1 scoop @alohamoment vanilla protein powder (optional)
- 1 tsp flax meal (optional)
- 1 tsp baking powder
- 1/2 tsp cinnamon + more for on top
- 1/2 tsp vanilla extract
- 1 tbsp date paste* (see below)
- 1 tbsp crunchy or creamy drippy peanut butter
*For the date paste (there will be a lot leftover because blenders have a minimum amount of stuff you must put in!) :
- 1/2 cup pitted medjool dates soaked in warm water for 5 minutes
- 1/4 cup water
Preheat oven to 400F and spray an oven-safe dish with nonstick spray.
In a mixing bowl, add in oats, almond milk, mashed banana, protein powder, flax meal, cinnamon, and vanilla and stir.
Add in baking powder and stir again.
Pour the mixture into the oven safe dish, sprinkle on extra cinnamon, then bake for 10 minutes.
While that’s cooking, add your date paste ingredients to a food processor or blender, and blend until you have a runny and thick date paste. 
Add date paste into a ziplock back (or piping bag) along with the 1 tbsp peanut butter, then cut off one corner of the bag so it acts as a piping bag.
Remove oatmeal bake from oven after 10 minutes, squeeze the date paste and peanut butter mixture over the top and then very carefully spread around with a utensil. Add on bananas if you wish.
Place back in oven for 15 more minutes, let cool

Ingredients
3 bags Jasmine Rice or 3 cups cooked rice (leftover is fine!)
3/4 pound boneless skinless chicken breast cut into bite size pieces
1 tablespoon vegetable oil divided use
1/2 cup finely chopped onion
1/2 cup chopped carrots
1/2 cup chopped red bell pepper
1/2 cup frozen peas
1 cup diced pineapple fresh or canned
1/3 cup cooked and crumbled bacon
3 tablespoons soy sauce or more to taste
1 tablespoon toasted sesame oil
salt and pepper to taste
optional: sliced green onions for garnish
Instructions
Cook the rice according to package directions.
In a large skillet, heat 2 teaspoons of vegetable oil over medium high heat. Add the chicken and saute until browned and cooked through, about 4-5 minutes. Season to taste with salt and pepper.
Remove the chicken from the pan and place it on a plate. Cover with foil to keep warm.
Wipe out the pan with a paper towel. Heat the remaining teaspoon of vegetable oil over medium high heat.
Add the onion and carrot to the pan, cook 3-5 minutes or until softened. Stir in the red bell pepper, pineapple and bacon; cool 2-3 minutes more.
Add the rice to the pan, along with the reserved chicken and frozen peas. Stir in the soy sauce and sesame oil and mix gently until everything is thoroughly combined. Season to taste with salt and pepper, add more soy sauce if desired.
Serve immediately, sprinkled with sliced green onions if desired.

Loaded with spicy shrimp, fajita veggies, black beans, brown rice, and a spicy 2 ingredient cream sauce 🌶🍱

Ingredients
1 pound raw shrimp, deveined & shelled
1 tablespoon olive oil
1 clove garlic, minced
2 teaspoons chili powder
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon cayenne pepper
Salt & Pepper
1-2 bell peppers, sliced (colors of choice)

For the assembly:
2 cups cooked brown rice
1 cup black beans, drained and rinsed
1 cup corn, drained and rinsed
½ cup Greek yogurt or sour cream
½ cup salsa
4 meal prep containers
4 2 oz sauce containers

Instructions
To Cook Fajita Veggies and Shrimp: Combine the shrimp, garlic, and spices. In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes or until tender. Remove the shrimp from the pan and add the sliced bell peppers (add more oil if needed) and cook for 2-3 minutes or until tender. 
To assemble: Divide brown rice into 4 meal prep containers (1/2 cup each). Top each container with ¼ of the shrimp, ¼ of the bell peppers, a scoop of black beans, and a scope of corn. In a small bowl whisk the yogurt and salsa and divide into 4 small 2 oz sauce containers or pour into 4 small snack size ziplock bags. 
To serve: Heat bowls (do not heat sauce) in the microwave for 2 minutes or until thoroughly. Drizzle with cold sauce. Enjoy!

But honestly, you could toss in any of your favorite breakfast goods.....maybe some sausage? P.s. these taco shells are made locally(and when I picked them up they were still warm!!!🤤)
I personally- like to “make the tacos” for a prettier picture...😂but to EAT- I will crush up the shell so it’s almost like a taco nacho salad!😋😍 I cant do it any other way!🙌🏽

I am FEELIN this Zucchini Bread Oatmeal Bake for this week’s #bakedoatsbytay 👏🏻 I’ve been adding zucchini to all of my oats lately because it just fills me up so much more and they get supa creamy, which is what inspired this take on one of my fave desserts. I hope you guys like this one 🤗 
OH and if you hadn’t heard already its national peanut butter day aka the sole foundation of my life so special shoutout to Her 🥜👏🏻 you’re doing amazing sweetie

ZUCCHINI BREAD OATMEAL BAKE 🥒🥄:
- 1/2 cup GF rolled oats
- 1/2 cup vanilla unsweetened almond milk
- 1/2 banana mashed
- 1/2 small zucchini grated and moisture squeezed out through a paper towel (the oatmeal will be super watery if you don’t do this😷)
- 1 scoop @alohamoment vanilla protein powder (optional)
- 1 tsp flax meal
- 1 tsp baking powder
- Lots of cinnamon
- 1/2 tsp vanilla extract
Preheat oven to 400F and spray an oven-safe dish with nonstick spray.
In a mixing bowl, add in oats, almond milk, mashed banana, zucchini, protein powder, flax meal, cinnamon, and vanilla and stir.
Add in baking powder and stir again.
Pour the mixture into the oven safe dish, add on some nuts if ya wanna,  then bake for about 20-25 minutes or until a toothpick comes out clean.
Let cool for 10 minutes, add some peanut butter and enjoy! #putadrizzleonit #cleaneatsbytay #bakedoatsbytay

Saying by-by to FIVE POUNDS!!!!! It's been an amazing two weeks! These workouts have pushed me and have challenged me to do more than I thought I could! I know that five pounds doesn't translate much into pictures, but I am so proud of myself for what I am getting accomplished!
