Tried something new today from on older cookbook I haven’t opened up in a while. It was like finding a new treasure! 🤩
I don’t know if I was just simply starving after Prenatal Fitness tonight 😅, or if I was just so pumped how quick this recipe was, or maybe how satisfying a good sandwich is sometimes, but you guys! This was sooo delicious! 🙌🏻
First off, the tart homemade #cashewcream sauce in this recipe is heavenly. The mix of chickpeas, celery, and green onion, with the sweetness of cranberries and a Granny Smith apple was so complimentary. .
Served mine open faced on toasted #glutenfree seed bread from @littlenorthernbakehouse and B had his smashed between two pieces of fresh #speltbread from @tallgrassprairiebakery . 😋 .
So excited to have a spin-off of a chicken salad/egg salad sandwich that was dairy free and way better than any salad sandwich I’ve had in years past. .

Welcome to this page! I’ll be posting simple recipes that are super easy to follow. I’ve talked to so many young people and one thing they all had in common is that they all LOVE food, but don’t know how or where to start cooking. This is also a learning experience for me! Roasted veg for dinner tonight- keepin’ it super simple. I just found out that brassica (cruciferous veg) are pretty much the same plants today as they were thousands of years ago. They have not really been changed or mutated much by genetic modification or other agricultural processes. That’s a big part of the reason why they’re so good for our bodies! 💪🏻💚
The only thing better than a super tasty dinner is one that is so. dang. easy! For these I made cassava flour tortillas (shoutout to @ottos_cassava_flour for putting an easy-peasy recipe right on the bag!), then mixed some cole slaw with red onions, mango, lime juice, and cilantro, threw on some cooked fish and shrimp, and then made a super fast avocado cream (avos, coconut milk, lime juice, cilantro, salt). It sounds like more work than it is. If you have a kitchen helper it goes SO FAST. Which is what we all want: less time between us and our food 🍴🐷😜 oh! And I tossed on some purple sauerkraut for a probiotic punch and a little tang😉
Cooking up a quick lunch today based on yesterday’s takeaway from farmers market.
Lots of mangold quickly fried with onion, mushroom and tiny cherry tomatoes wrapped up in scrambled eggs. Then some sprouts, carrots and pesto on the side. 👌
@shutthefigup is on point about the benefits of batch cooking! It helps you save money while making sure that you’re eating nutritious food. And by the way, this meal prep spread is amazing!⠀
-arugula mixed with chopped romaine⠀
-whole roasted sweet potatoes (to stuff, mash, or slice up for bowls)⠀
-roasted eggplant (roasted at 400 in avocado oil, garlic, oregano, salt n pepper for 25 mins or until golden)⠀
-roasted brussels (same as eggplant but roasted for 35-40 mins or until nice & crispy)⠀
-organic ground turkey cooked in avocado oil with garlic, oregano, smoked paprika, & salt n pepper)⠀
-plain cashew cream to drizzle on bowls (I like to make a bunch of plain cashew cream for the week & I’ll leave it plain or add stuff to it depending on what I’m in the mood for. For example: hot sauce, pesto, chili paste, etc.)

Bit of an accidental brekky at @typikaclaremont the other day after heading to @edenandwild only to discover it’s closed on Sundays!! 😩Never disappointed by their Huevos Rancheros tho, which they can make vegan and give free avo as a substitute! 🤗❤️👌🏼🥑✌🏼🌱 Clearly a cafe after my own heart 😍😍😍
