One pot chicken Parmesan. I usually make about 10,000 dishes when I cook so decided to take a stab at doing it all at once. Quite pleased with this. Tossed: Brussels sprouts, mushrooms onion and green beans in avocado oil, garlic and powdered Parmesan and placed around the chicken. Cooked it all together and in the last 20 minutes topped the chicken with tomatoe sauce and fresh grated Parmesan. Quick broil at the end the char the top a bit and boom dia. Delicious and minimal effort lunch.

Went for a second workout tonight. Shot hoops for warm up. Did a mini leg day then swam lengths. My body is failing currently as it’s utterly exhausted. But also feel amazing and sometimes I love feeling this exhausted because I know I gave er all.

There is nothing like driving through the mountains in a snowstorm!  Had a great day skiing with my family and now hanging out playing games and relaxing, and staying keto all weekend 😊 hope you are all having a great weekend!

Picking out suits for the 🚢 and came across this long lost beauty. I’ve NEVER worn the bottoms cuz they show a lot of 🍑!! But today, I tried it one thinking, “What the hell, why not?” Ummm...I am floored 😳 Not only does it fit, it’s actually a tad loose. I hit my goal weight and am only 0.3% away from my body fat goal. I knew from the get go I shouldn’t add the cheese right off the bat but followed the recipe because I never do and thought it should. I was wrong because the cheddar cheese is not as ooey gooey as I was hoping it would be. But I’m sure we will still choke it down 😝 with a side of bacon fat roasted Brussel sprouts!

Forgot to take a pic (unless you count the sweaty crotch shot that probably isn’t insta appropriate) so you get the post gym no filter car selfie. 
Playing catch up after being on the road for 6 days. I’m way behind on my workout goals but I’ll catch up by Sunday. Came for a quick run tonight. 22 minutes of sprints and 3 minutes of steady state jog to finish. Sprints were the same ol routine of 30 secs @ 3.5 and 30 secs @ 5.0,5.5,6.0....10.0 and then back down. I find that has really helped with my endurance lately. The triathlon is really approaching quick so these next few weeks leading up to it I’ll be in town and be cardioing it up. My legs are also jello so I better get back into rhythm. PS brows getting done this week, I know they are bushy AF but we will survive.

So excited to do my first #flexfriday! I know I’m flexing baby muscles but you can still see something there!  It’s really awesome to start getting some definition. I’m coming up on my one year anniversary of working out at @otflamesa and I’m just starting to see composition changes. Not because OTF isn’t amazingly effect but because I wasn’t supporting the effort I was putting at the gym with my diet. I was eating A LOT of garbage. I think my diet change is largely responsible for the visible changes. Super happy with the progress since changing my dietary changes.

Cream cheese scrambled eggs and spinach and feta chicken sausages. These sausages were amazing and I have no idea where they were from unless “my parents deepfreeze” is an acceptable answer. But if you can get your hands on them you should try them 😂

My favorite way to prepare New York Steaks❤️ Preheat a heavy fry pan or cast iron skillet over medium-high heat.

Coat the skillet with oil (olive oil, ghee, butter etc).
.
Salt and pepper beef generously.
.
When oil is hot add meat to the skillet and don’t touch it for several minutes. And not so hot that it blackens the meat. (We seem to think it has to be really hot to sear... not the case) You have to judge the temp for your stove, they’re all different.

After four minutes or more (depending on your stoves temp)turn the meat over and do the same on the other side.

Sear all the sides until desired crust. Then take the pan and put it in a 400° oven until a internal temp of 125° is reached for medium rare. Pull out and rest for ten minutes and serve.

I sometimes add 2 tablespoons of butter, some fresh garlic and fresh rosemary at the start for a deeper, richer flavor, basting the steak with a spoonful butter/beef fat.

My first #throwbackthursday is appropriately happening on my birthday. The picture on the left was my birthday dinner in 2015. I’d had my daughter about 8 months earlier and was feeling a strange combination of “I am woman hear me roar! I can create life and help another human thrive!” and “omg I’m so fat. I’ll never be healthy again. I hate my body. Does everyone else think I’m fat? I need to hide”. Having previously been an athlete, I hated being so out of shape.

Cut to today (excuse the lighting - my work bathroom has terrible lighting) no. more. hiding. I feel so strong and happy; I don’t feel like I need to hide anymore. I’m definitely not where I aspire to be BUT I’m getting closer every day. And I’m so thankful that I’ve found what works for me (thank you #keto,  @otflamesa and my hubby @alkaline_84 for endless support). Today is truly a happy birthday surrounded by love (from others and myself) and I’m so thankful.

I tried the recipe from @ibreatheimhungry and I loved how it all came together but I think next time I’ll halve the crust and double the curd (and nix the xanthum gum and/or gelatin) because that’s my favorite part! Otherwise this recipe was exactly what I was craving for my Valentine’s Day dessert! Excuse the icing sugar job, I accidentally got my sifter wet and there is no coming back from that...and my spoon sprinkle technique...clearly needs work 😂😂😂

Today was so difficult. So fucking difficult😭. Every rep was hard. I made it through but damn. Some days are just like that I guess. But plyo pushups in the burnout?!😭 who does that? I can't believe I'm having this thought, but I am so glad that tomorrow is cardio. I couldn't do another strength day tomorrow. 
Oddly enough, even though I struggled today, these are the days that I am most proud of myself. For pushing through and finishing the workout.

I saw this posted this week on someone’s feed (@baconand_megs it might have been you) and I didn’t think twice because we usually don’t have the same products in 🇨🇦 as in the 🇺🇸 BUT at shoppers last night I found it and gave it a try.  Not bad!  I can taste the sugar alcohols but it was a nice change from my usual water or Coke Zero.

Same trench coat two years apart. I had already lost weight on the left and was darn proud of what I’d accomplished (I still am). It feels good to be in control of my health and wellness after a couple of years of being totally out of control with eating poorly and not caring enough to tell myself no. Though I’m not eating whatever I want whenever I want right now, I actually feel much freer than when I was eating everything in sight. Still a ways to go, but this is a journey to last a lifetime, not a sprint. #progressnotperfection #transformationtuesday

Workout #2 this evening - did a leg and arm workout courtesy of @aaptiv followed by a glass of wine from a bottle that really spoke to me tonight. We visited @churchandstatewines this summer as part of our annual trip to the BC wine region and it was amazing, this is the last bottle from them (although I still have about 40 other bottles to go). Since starting #keto I drink less but it’s okay cause my stash lasts longer 😊💕 🍷

Here is a subtle #transformationtuesday - on the left was this morning and almost 6 months Keto and on the right was one month Keto.  Same shorts and the tanks are the same size / brand @lululemon .  It’s amazing to look back and see how far you have come (take lots of pictures). I am not sure of the weight difference, probably 15 - 20 pounds.

Get up and keep on keepin on. 
Legs and glutes today. Killer. Reps were higher. Weight was higher. First, narrow squats suck. They're hard for me for some reason. I hate doing them. But I do them. Second, i upped my weight. 30 additional pounds on glute bridges (hip thrusts) and 20 pounds higher on deadlifts! 🙌🙌 It took a while to get through today too. I was changing the weight plates a lot. I feel good but haven't stopped shaking😂. Have a good one .
