I had actually forgotten about this Trio of fermented veggies and was delighted when cleaning out the refrigerator to discover these in the back! That's a great thing about making cultured vegetables. The longer they sit in the refrigerator the more fermented and tastier they become. 🥑
One concern I always hear people express when intending to eat healthier or move toward a more plant-based diet is having all the vegetables on hand and cut up and ready to grab. The other challenge is using them before they spoil. That's the beautiful thing about having cultured/ fermented vegetables on hand. They're always ready and waiting to be enjoyed and they don't spoil. At any given time I can have 8 to 10 different varieties on hand so we never get bored. Most are homemade but I add in a few store-bought varieties for the particular requests of my 7 year old💜
I always like a little crunch so I added some of the grain free simple Mills garlic and herb sprouted seed crackers as an accompaniment. This variety is nut free and comes in delicious flavors. 🍏Healthy meals can be simple AND delicious! Leaved early today. Needed to breath. Away from work and away from home even. Did extra hours yesterday so I could do this. Away from work where I am always needed and surrounded (even if I loooooove my job and ADORES my team) and away from home, where it’s still chaos, messy and without warm water. Waiting for my Love @sekodunord to be over with his big exam at McGill, bought some books. Taking time for myself. Regarding my second dad. Spoke with him, and news are not as bad as it sounded this morning. He’s still suffering like hell because of his broken vertebrae but, the cancer is a skin one, and treatable. I feel like a heavy weight has been lifted of both my heart and my shoulders. There was a strong possibility for bones cancer... but no!!!!!! Doctor wasn’t right on this one. Deceptively bright sun pouring into my kitchen trying to trick me into playing outside in zero degrees. No thanks. I’ve officially reached the point this winter where I miss dirt. And mud. And brown grass. I guess after 9 winters that was bound to happen. So I’m playing in the sun that’s filtering into my warm kitchen and trying out a new focaccia recipe from @theclevercarrot’s new sourdough book. I’ve made focaccia before but this method is a bit different than I’m used to. Looking forward to seeing the results tomorrow!
Trying to resurrect mother after too many days and weeks of neglect. I’ll have to see how she is at the end of the week, her strength and acidity, and hopefully be able to make some bread this weekend. Being half Salvadorean means being part of a beautiful food culture. But it also means reconciling with #antiBlackness , a remnant of #whitesupremacy / #colonization by spain.
As much as we would love to erase this and plenty other destructive #whiteholidays , we can at least choose to educate each other and ourselves, and hopefully unlearn / reclaim our relationship with #history and #colonialism . One aspect of #blackhistory that I am excited to learn about is the way in which African trade, culture, and technology gave rise to many of the Mesoamerican civilizations from which so many of us are rooted. Another is the history and culture of fermented foods within and between the health of Black and Brown indigenous nations. This history is the space of reconciliation between erasure of cultural identity and rediscovery of sense of Self.
Today marks a certain cruel irony in a lot of ways: most people will be hypocritically condemning the current administration while celebrating (ignoring) the atrocities committed by all the others. That #presidentsday should fall during #blackhistorymonth is another, given the history of violence (both overtly through culture and covertly through policy) committed against Black people by former presidents. Even some of this country's most culturally or politically coveted #presidents have in some way contributed to violence here and / or abroad, and most often in the name of some capitalistic endeavor (all the way from #Washington with Africans and Natives to #Obama with Arabs and Muslims ). If you are interested in educating yourself about the true #americanhistory in which Black, Brown, Native, and poor people existed, I highly recommend "A People's History of the United States" and would love any recommendations for further reading as well.
