🥑🍳🍅POACHED EGGS & CHILI🍅🍳🥑 Faster than fast food...and so easy. I love the way you can just throw it all in the pot and before you know it supper is done! If you are new to veggie ground then chili is the recipe to try it with first. Generally we normally have our chili on pasta topped with cottage cheese and guacamole ....however yesterday my son convinced me to make pancakes for lunch....with WHITE FLOUR!!!😰 So feeling guilty about that I didn't want to have more with the pasta... Anyways this was my supper bowl...I ate at 6:00 pm... and by midnight I was laying in bed asking myself...."what the heck were you thinking?!!" I was still so full! This was a most delicious way to have the chili. Loved it...big hit all around...and protein packed! 💪 Hope everyone is well and happy! 🌞🌈 ......❤ to all 🌎! For last night's chili I placed in the pot....
2 large sweet potatoes peeled and diced & enough water to almost cover.
2 large cans diced tomatoes with the juices
1 pkg St Ives Veggie ground
1 can red kidney beans drained and rinsed
1 white onion chopped
3 cloves garlic chopped
4 tbsp taco seasoning (or you can use chili packet)
1 tsp each garlic and onion powder
1/2 tsp celery salt
Seasoned salt to taste
Simmer all together on lower heat stirring occasionally...when sweet potatoes begin to soften add in .....
1/2 cup dark bulgur
And continue to simmer till done. Served with grated cheese...(I used vegan mozzarella) and poached eggs...avocado with garlic powder, salt, & lemon juice & mashed together.
