Spent the morning cooking up a storm. Loads of veggies, chicken poached in chicken stock with peppers and onion and a creamy fish pie (tuna, cod and salmon) with veg and light philly, topped with butter nut squash mash. I need to be extra prepared this week as I know it’s going to be a busy week at work... so will stash all of this in the fridge/freezer to choose from ☺️

Bacon and mushroom carbonara, syn free and the last another third of my #hexa in parmesan, my husband made this for me and the children kindly before he heads out to work. Need to go shopping for some salad, have to count the mushrooms as speed and have some fruit after.
