At every turn with our first Whole 30 (we’re on day 10) I’m surprised at how bad some things I attempt to cook are, and how good others are. These were better than we expected. We all loved them! I would normally dust them with seasoned Einkorn flour before baking but used cassava flour instead. They got so crispy! After baking I tossed them with a simple sauce of melted clarified butter, coconut aminos and Frank’s hot sauce. (We ate them with a bunch of veggies..not pictured.) My guys asked me to put them back on the menu again next week.

Totally unrelated but lately, I've been rolling around some ideas for a blog. (Actually, a picture of a coffee mug just seems to beg the question of a blog, doesn't it?) I have zero experience in this arena, but hey-- all the more reason! I'm wondering what you all feel would add to the conversation of health, wholeness, autoimmunity, and food. The main reason I started the #eliminationdiet was because my 3 year old son has been treated for asthma since he was 6 months old. The medicines he takes seem to help some, but not enough. After watching him go through all that we decided to see if he may have some food sensitivities that may be causing inflammation. One of his favorites for lunch is the Hickory Smoked flavored Starkist tuna pouches. We can’t eat some of the additives in there so I tried Genova. I’m happy to say we both love it! @parozi83

I started the elimination diet because I have Crohn’s disease and was looking for alternate ways to help my tummy. During part of the time on the diet I was on meds including steroids. I just finished a round of steroids a month and half ago and was feeling pretty good until about two weeks ago. And then this week I did not feel well at all - bathroom issues, stomach pain, crampy legs, bloating, fatigue etc, like almost back to square one. So I’ve decided to start the diet all over again from the beginning. First of all I think my body could use the 2 day detox to try and get my stomach back on track. Second I’m wondering if my steroids compromised the diet. For example I was like wow on this diet my back feels great, my feet never hurt, no foods seem to bother me, I feel like a million bucks etc. But since going off my steroids I’m noticing all these issues coming back - and am wondering if food or Crohn’s is the culprit. So yes I’m like 100 days in but I’m going back to the beginning and starting on DAY 1.  I’m hoping phase 1 and 2 will be a little easier this time around since I don’t need to drop many foods (in all this time I only added in like 6 new foods) and I already am used to #nosugar #nogluten #nodairy #nocorn #nosoy so I should be ok. I’m actually excited to see, without steroids, what the diet is like. My 🌿 green smoothie 🌿 is actually a beautiful shade of lavender 💜 today, thanks to blueberries. It's supergreens, collagen peptides, hemp hearts, lemon juice, lots of ginger, bee pollen (thanks to @the_nourished_bite for talking it up - I love it!) and frozen blueberries.

The rest is my standard (easy) weekday wrap of wild tuna, guacamole, and spinach on a paleo wrap. Lots of fruit. And some @fermentedkrazykrauts for good measure. Plus gratuitous olives... just because, well, olives. .

Day 4 of the Autoimmune Protocol . 
Breakfast: skillet sweet potatoes, bacon, roasted broccoli. I had reservations about serving and eating broccoli for breakfast, but roasted broccoli is amazing! It was delicious with breakfast! . 
Lunch: leftover Italian Wedding Soup and fruit smoothie. My boys were craving ice cream, so I made them a peach, pineapple, and banana smoothie to go with lunch. I was a little hesitant to have something this sweet for lunch, but as you can see in the last photo, my blood sugar was great by dinner! . 
Dinner: roasted chicken with pears, baked sweet potatoes, and cucumbers. The chicken and pears were amazing. I will share the recipe on the blog soon. I will be making it again even when we're done with this 30 day elimination diet. It was SO good.

Blood sugar: other than my morning reading, I was in range all day. I had second of most of these meals too. I am full, satisfied, and craving-free between meals. . 
I'm feeling great except I'm coming down with a cold and sore throat. We'll see how that affects my blood sugar. Overall, very happy with Day 4. I'm still banking on my morning blood sugar becoming lower and more stable as the diet goes along. I'll be sure to let you know!

I’m starting with eggs. The most conservative approach would be to eat only the yolk, but I do not suspect I have problem with eggs. I’ve missed these fellas in the morning! Not eating gluten? I’ve been making an easy bread like replacement that doesn’t contain dairy, eggs, milk or any nut products and I am obsessed. 
All you need is: chickpea flour, arrowroot flour, spices and coconut milk. 
I use 3/4 cup chickpea, 1/3 arrowroot and a full cup of coconut milk (the thick stuff from the can), mix with some garlic powder and salt/pepper in the blender. Then fry in a pan like a pancake for flatbread or bake it in the oven in a cast iron pan for this pizza crust!

I may even like this more than traditional bread and it takes me less than 30 minutes from start to finish to eat and you can prep them in advance. 🤤🤤🤤 Here we made personal pizzas with it, topped with broccoli, black olives, sautéed onion and tempeh. #veganglutenfree

I have recently done an #eliminationdiet in an effort to figure out if a certain food is what's causing me to break out, even in my 30s. So far, sugar and fried foods are not my friend. I guess that shouldn't really come as a shocker. What is shocking, though, is that I had to cut out my daily espresso and since re-introducing it, I'm not really feeling it as much. Another round of #fridayintroductions  over here, for all the newbies around these parts. ⠀ ⠀ Hi! I'm Ashley, a wedding and lifestyle photographer based in Ottawa, Ontario. ⠀ ⠀ I like to laugh, but only if it's really funny. My favourite show was and still is The Office. I have re-watched the whole series an embarrassing number of times. ⠀ ⠀ I have recently done an #eliminationdiet  in an effort to figure out if a certain food is what's causing me to break out, even in my 30s. So far, sugar and fried foods are not my friend. I guess that shouldn't really come as a shocker. Toasted Coconut Carrot Cake Muffins. 🤤 Perfect addition to your weekend if you are following the #Charlestondiet. If you reintroduced coconut on HYH diet this recipe is #HYH safe as well! INGREDIENTS
* ½ cup shredded coconut
* 2 cups whole wheat flour
* ¼ cup cane sugar
* 1 tsp baking soda
* ½ tsp baking powder
* ½ tsp salt
* 2 tsp cinnamon
* ½ tsp nutmeg
* 1 cup coconut milk
* ½ cup maple syrup (get 100% pure syrup) * ¼ cup coconut oil, melted
* ¼ cup applesauce
* 1 tsp apple cider vinegar
* 1 tsp vanilla extract
* ½ cup shredded carrot
* For the glaze:
* 2 tbsp coconut milk
* ½ cup powdered sugar, or more if you want a thicker glaze
* Optional: toasted coconut for topping

INSTRUCTIONS
1. Preheat oven to 350°.
2. Pour coconut out onto a baking sheet and toast coconut until it's golden. Be VERY careful not to burn it. Check it after 3 minutes, then again after 5 minutes and so on. You want it to smell and taste like toasted coconut, not burnt! Once coconut is toasted, set it aside.
3. Combine flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl and set aside.
4. Next, melt coconut oil in microwave or over stovetop then set aside, allowing a few minutes for it to come to room temperature.
5. In a separate bowl, mix coconut milk, syrup, applesauce, vinegar, and vanilla together; then, add the coconut oil.
6. Combine wet and dry ingredients in the same bowl, then stir the shredded carrots and toasted coconut in by hand.
7. Line a muffin tin with muffin liners and distribute the batter into the liners. Bake muffins for 20-30 minutes, or until a toothpick comes out clean.
8. Remove muffins from the oven and while muffins are cooling, make the glaze by whisking milk and powdered sugar together.
9. Drizzle glaze over top of muffins, sprinkle them with extra shredded coconut and enjoy!

Similarly, if our diet is sporadic or lacking whole foods and fibre, our brain gets a signal and may be feeling sluggish, foggy or out of sorts. 
When treating gut symptoms, we always consider the whole person, the timing of the symptoms and other life events. 
Simple interventions like increasing fluid and fibre from fruit, veg and wholegrains, or balancing meal sizes better throughout the day can often resolve the problem but we often recommend these in conjunction with stress reduction techniques like meditation or yoga if stress is an issue.

Dietary trials like a Low FODMAP or Elimination diet can be very helpful in identifying foods that may trigger more persistent symptoms.

This ‘Mantra’ - I AM PERFECT JUST AS I AM - is one I first heard in a yoga class and is a good one to repeat daily to boost self-confidence, resilience and mental strength....and hopefully help reduce feelings of anxiety,  self-doubt and gut discomfort.

green smoothies are one of my favorite things but I’ve had to change my recipe up a lot since going low fodmap. Gone are my pea protein powders and frozen cauliflower which were smoothie staples for me. ✨Side note: cauliflower is one of my favorite vegetables and most frequently eaten but it’s super high in fodmaps. I’ve had incredible relief since cutting it out. It’s all about what works for you, food is personal.  In todays smoothie🥤: 1/2 banana, spinach, a few slices of frozen zucchini, ground flax seeds, vanilla @paleoproproducts protein powder, a little almond butter, & almond milk. Just as creamy and satisfying but no stomachache and bloating hours later like usual 🙌🏻I used to be so fearful of bananas because of the sugar content but have added them since going low fodmap.  They never hurt my stomach and digest so well for me. Lesson learned: listen to what your body is telling you!! 🍌🙏🏼 #abalancedbite #lowfodmap #glutenfree #dairyfree

My breakfast, lunch and dinner for two days. 🍵 My nutritionist suggested I only have a hearty chicken soup for two days to see whether it helps the bloating (my lower abdomen bloats up a lot and always more towards the later parts of the day). It was quite tough for me not to have any snacks and only soup but at least this seems to confirm that my issue is not related to what I eat but just to the fact that I eat at all. Trying to help with supplements and a low carb diet to kill the harmful bacteria and help the good guys. 💪💪

This is pretty much my go-to dinner when I can’t think of anything else to make. I make either rice or quinoa, ground turkey with homemade taco seasoning, sautéed zucchini/corn/black beans, and then top with some stuff. This time I made yellow rice as the base and topped with salsa verde, homemade guacamole, and chopped spinach. It’s easy, gives me at least one night of leftovers, and gets the job done.

Sorry that the garden post isn't up today. It's sitting in my draft folder. Sunday and Monday night this little guy seemed to be doing great. (He had some back to back sickness and food allergy issues the past two months.) And then he got worse again but with no visible sign of illness... Then I had a sudden realization - if he had an actual allergy to a food, and I'm eating it and still nursing him, he is still getting it. 🙈 Pardon the obvious case of mom brain here.

The one food we believe to be a for sure allergy is egg (hives, vomiting, irritable for 24 hours even with Benadryl, from a teeeny, tiny piece.) It's possible the hives and vomiting were from the nasty cold that manifested a couple of days later, but the symptoms were almost instantaneous after he swiped my egg. Anyway, he has also shown signs of allergy/intolerance to dairy including eczema.

All that to say, without testing you can't say for sure, but I'm going to cut out dairy and eggs for a month and see what happens. Because we've got to do something. Probiotics, reflux meds, ibuprofen, cold meds (all prescription) and solid foods (carefully chosen) and we still aren't getting sleep and he is still cranky and clingy and acting like he is in terrible digestive distress. (*I should add that we haven't started an elimination diet before because everything was being attributed to his sickness and reflux that the Dr thought must have come back bc he was sick, which supposedly can happen.) #happyheartandhome #foodallergies #eliminationdiet

It's possible the hives and vomiting were from the nasty cold that manifested a couple of days later, but the symptoms were almost instantaneous after he swiped my egg. Anyway, he has also shown signs of allergy/intolerance to dairy including eczema. All that to say, without testing you can't say for sure, but I'm going to cut out dairy and eggs for a month and see what happens. Because we've got to do something. Probiotics, reflux meds, ibuprofen, cold meds (all prescription) and solid foods (carefully chosen) and we still aren't getting sleep and he is still cranky and clingy and acting like he is in terrible digestive distress. (*I should add that we haven't started an elimination diet before because everything was being attributed to his sickness and reflux that the Dr thought must have come back bc he was sick, which supposedly can happen.) #happyheartandhome  #foodallergies  #eliminationdiet

Milk: drank a glass today and I felt it grumbling and processing in my stomach.. nothing major, a little gas afterwards but no pain or anything.. basically what I had suspected before - no intolerance but probably a sensitivity. Gonna have to test again..

Lastly: protein bars.. unfortunately ate them in the evening so no clue what happened in the night😁 but they also seemed to go down pretty well. Gonna have to retest as well!

Leftovers for lunch! Chicken meatballs with chickpea pasta topped with gluten free/vegan pasta sauce - could do this with a meat substitute to make it vegan. The meatballs were prepared with @iansfoods Italian style panko and @followyourheart Parmesan vegan cheese. Used @eatbanza pasta (kinda ruined the look of the noodles getting them out of the bowl in the fridge) and @mezzetta Tomato & Basil pasta sauce. I have to give MAJOR kudos to Chick Fil A!  Their grilled nuggets are gluten free!!! Best of all, the person helping me had them make a salad without cheese once she realized I couldn’t eat it.  We were having a conversation and it came up that I couldn’t have dairy when asked what dressing I wanted, and she quickly had them make a salad for me.  It’s great having someone like this when you go out to eat to ensure the foods are completely safe for me. hi loves! 👋🏼 it’s been a while since i’ve posted on here. for the past couple of weeks i’ve been on the @cleanprogram and loving it. my naturopath recommended i do the 21-day program to clear some imbalances in my body, and i‘m hoping it’s working to do just that 💕 the program consists of 2 shakes a day, a solid meal of real, unprocessed foods (basically what i try to eat while not cleansing), and supplements to support liver and gut health. besides being sick for a full week in the middle of the cleanse, i’ve been feeling great - lighter, brighter + more well-rested🙏🏼 i will probably continue to mostly eat meals according to the clean principles once i’m done with the cleanse next week, but am definitely looking forward to having tacos and sushi again 😏🌮🍣 have you tried clean or any other elimination programs? would love to hear all about your experience. happy almost friday! ✨

I notice if I eat the same thing too often I tend to build a little sensitivity that likely promotes inflammation which leads to imbalance. For ideal nourishment I tend to seek unique seasonal foods so I can vary my diet and keep aligned with the cycles of nature. 
This morning’s Breakfast= sautéed celery root (celeriac), yellow beets, Okinawa sweet potato, leftover wild rice from last night’s supper and some parsley. This doesn't include the snacks (except the one with vitamins and popcorn) but I eat snacks throughout the day and stay full. ahhhhhhhh I'm on a spiralized vegetable kick these days, guys. And earlier this week, I spiralized a rutabaga with the most fantastic results!! I've had mine for a while, but for some reason it seemed like a pain in the butt to use? Um, it's not. What was I thinking?! 🙄 .

So, I posted a new recipe on the blog: the pictured Cacio e Pepe with Zoodles. It's paleo, gluten free, grain free. It only has five ingredients! I'll post the recipe here, too. It's so good, and comes together in no time. My husband was extremely skeptical, but he loves it, too 😍 .

🍝 Cacio e Pepe 🍝

2 zucchini spiralized
.
3 tbsp ghee
.
1/3 cup nutritional yeast, 1 tablespoon reserved
.
1/2 tsp freshly ground pepper .
sea salt to taste
.
⏺Spiralize zucchini and set aside ⏺ Melt ghee in a pan over medium-high heat. ⏺ Add zucchini to pan, and saute for 3 minutes. ⏺ Add the nutritional yeast and pepper to the pan, minus the reserved tablespoon, stir to combine and nutritional yeast is absorbed by the butter. Remove from heat. ⏺ Serve with additional nutritional yeast sprinkled on top and additional freshly ground black pepper. Enjoy!

Note: I used @fourthandheart Himalayan Salt-flavored ghee (my favorite!), and barely added any additional salt to this dish. .

ahhhhhhhh I'm on a spiralized vegetable kick these days, guys. And earlier this week, I spiralized a rutabaga with the most fantastic results!! I've had mine for a while, but for some reason it seemed like a pain in the butt to use? Um, it's not. What was I thinking?! 🙄 . . . So, I posted a new recipe on the blog: the pictured Cacio e Pepe with Zoodles. It's paleo, gluten free, grain free. It only has five ingredients! I'll post the recipe here, too. It's so good, and comes together in no time. My husband was extremely skeptical, but he loves it, too 😍 . . . 🍝 Cacio e Pepe 🍝 . 2 zucchini spiralized . 3 tbsp ghee . 1/3 cup nutritional yeast, 1 tablespoon reserved . 1/2 tsp freshly ground pepper . sea salt to taste . ⏺Spiralize zucchini and set aside ⏺ Melt ghee in a pan over medium-high heat. ⏺ Add zucchini to pan, and saute for 3 minutes. ⏺ Add the nutritional yeast and pepper to the pan, minus the reserved tablespoon, stir to combine and nutritional yeast is absorbed by the butter. Remove from heat. ⏺ Serve with additional nutritional yeast sprinkled on top and additional freshly ground black pepper. Enjoy! . I have debated on whether or not to post this. This photo was taken the morning of day 1 of the #eliminationdiet - it’s important to me to track my progress and share it with others. I need everyone to help hold me accountable. My goal isn’t to lose weight, but that will happen as I’m cleaning up my intake and moving around a lot more. I’m proud to say that after a week I’ve already lost 5.8 pounds, my belly isn’t as bloated and I feel great! @parozi83
