SWEET POTATO OATMEAL COOKIES
2 sweet potatoes mashed
1 cup oats
1/4 cup almond butter
3 tbsp honey or maple syrup
2 tbsp ground flax
2 tsp cinnamon
1 tsp baking powder
Chocolate chips and dried cherries
Combine all ingredients in a bowl, then bake for 11-13 min at 350- easy peasy!

I shared this easy 20minute meal on my stories last night and it’s what I had for dinner yesterday and lunch today. I’m very big on “cooking once and eating twice” so I always make sure I make enough servings to make any meal worth my time. Don’t get me wrong, I absolutely love cooking and eating healthy, but there’s a whole process to it! You have to defrost any meat you’ll use, make sure you have the right ingredients, invest in the prep and cook time, make sure you know what you’re doing, and then after you get to enjoy your meal you have to deal with cleaning up the mess you made preparing it lol. It’s more than just “20 minutes” when you really think about it. I value my time, but I also value my health so I make adjustments and sacrifices where I need to so that I can find the right balance between the two 😘

I got this delicious avocado toast from Le Pain Quotidien and i’m seriously craving some of it right now!! Avocado toast is a great way to start your day since it provides a great source of fiber, vitamin C, and healthy fats!
This ones an oldie but a goodie. A great way to add flavor AND nutrition to your greens is to add some apple. Kale doesn’t taste quite so kale-y when there’s sweet honeycrisp 🍎 or tart Granny Smith 🍏 involved. What’s your favorite apple to add to salads?⠀

Filipinos love to get together around food especially when celebrating something. Our celebrant wanted Vietnamese so off we went to try out Bawai at Uptown Mall in BGC.
Bawai means grandmother in Vietnamese since they started in their weekend home in Silang, Cavite and Yong Tatlonghari who is the grandmother and a native of Vietnam cooked for their guests while her husband, Virgilio, took care of the front of the house together with their household staff. They decided to convert part of their weekend home into a restaurant after the couple retired and their children kept on bringing in friends, then friends of friends over. They only opened the restaurant on weekends when the family will stay over coming in from Manila.
I think that I have been to all of Bawai's branches by now and I do miss Yong Tatlonghari's cooking as they expanded over the years. There's nothing like grandmother's cooking even if they are not our own.
