Dispelling the belief that eating a plant-based diet is bland, boring or difficult. This is my take at a Pad Thai salad, chock-full of nutrients to nourish the mind, body and soul. This consists of zoodles, quinoa (cooked in mineral-rich, filtered water), peeled carrots, cucumber, red bell pepper, red onion, avocado and garnished with green onions and basil (all organic— preferred, not necessary). I improvised the sauce by blending soaked cashews (in filtered water), coconut aminos, lime juice, a touch of honey, ginger root and garlic. I usually feel ripped off when I pay for avocado toast from a coffee shop - I mean $6-9 for a piece of bread plus a small chunk of avocado is not exactly a steal. •••
But today was different. Our home has the bare minimum because we’re going out of town tomorrow so I stopped by @upperleftroasters to get lunch and work done. I think I can honestly say this was the BEST avocado toast I’ve ever had (and well worth the price)!

Being healthy doesn’t have to be hard! Just as they say eat more from the earth and less from the box (ALSO most processed food comes in PLASTIC which and therefore is bad for you AND for the earth 🌏)! This literally took minutes to prepare (if you’ve got the chickpeas ready to go!) 〰️ tahini dressing is my fave ➡️ 1 TBS tahini, 1/4 turmeric, 🍋 juice to taste (I used a quarter of a big one), a splash of tamari or coconut aminos (or a mixture of both of you’re feeling a little fancy 😏), 1/4 tsp of fresh (or ground if you’re feeling lazy) ginger, garlic, lots of black pepper & water to your desired consistency (thicker is better in my opinion 😏) 😋

In the past, when spring began, I would choose foods to prepare for “swimsuit” season. It has taken me years to learn to use food as fuel, not just a means to look good. Cedar Plank Salmon is delishhhhh! I soaked the cedar plank for 45 mins in the marinade then oven baked it on 350 for 20 mins. I cheated and made boxed rice 😂 only a 1/2 c. tho and peas on the side #healthyeats#protein#proteinislife#eatyoveggies
🍊🍅🥔🥝🥗I grew up with a Mom that cooked REAL food ALL THE TIME! We ate all kinds of fresh fruit and fresh vegetables. Mashed potatoes never came from a box. Oranges sliced in circles with hot cocoa were a standard thing in the winter. We had sliced banana in milk before we went to bed. We usually had some type of roast cooking in the oven on Sundays and we would eat an early dinner on that day. I remember when my Mom went back to work. The crockpot became a heavily utilized kitchen appliance. When we got home from school there were usually instructions for someone to scrub the potatoes, shuck the corn or set the table. It was a lot harder for her to do it all. She did one heck of a good job. I am SO grateful for being raised with those experiences. I find myself lately scratching my head and wondering what have we done to ourselves 😌 How are we raising a healthy younger generation? Now a days, making dinner for a family consists of minimal effort and time. I get it. Life is ultra busy and I admit to ordering pizza, packing everybody up in the car and going out to eat because I just don’t want to cook. I have just been missing simple wholesome food lately. I am guilty of “kitchen burnout.” With 4 kids, three boys who are constantly trying to bulk up, dang, I have been so sick of the kitchen. Would someone cook FOR ME?? 🤭 Well, I think I’m coming out of my slump! I made this spinach soup today. I LOVED IT! The teenager didn’t even want to taste it 😔 it clearly was a little too adventurous for him! I will make this again. I will set the table and everyone will get a little cup of Spinach soup. I’m not giving up; it really was good! Like really good! My hunch is, once they try it they will like it! 😉 Anyway, the bright green looks very “spring like” to me! Btw the way this is why I don't diet becasue if I did I would of CHEATED so bad on it this past weekend, I don't know if our relationship could of recovered from it! 🤣🤣🤣. But I am always reminded that eating healthy most if the time and having treats sometimes, means you can enjoy everything and not put on weight! So one bad weekend won't kill you. You just pick up on eating better and more nutritious and move on.
It's having sweets, a lot of carbs, greasy foods all the time , that will inevitably make us bloated, heavier, and feeling run down. If you missed my stories, I shared that I’m experiencing seasonal allergies for the first time. Headache, stuffy nose, and brain fog had me feeling crummy all day and I basically got nothing done. I’m shrugging it off though knowing that tomorrow will be a better day!
I made some spicy chicken burritos (hello clear sinuses) with brown rice, black beans, avocado and smothered them in a homemade dairy-free green Chile cream🌶
So yesterday I had a story showing my chopped veggie meal prep, it was really nothing exciting... a massive container of chopped kale, cabbage and carrots. A large pan of roasted pumpkin, eggplant & red onion, and some poached chicken.
Today I just sautéed the kale mix, heated up the chicken & roasted veg -added some quality good fats with a yummy 2 ingredient sauce: tahini and brown miso paste. Threw it all together and there you have it. Lunch In less then 10 min.
Veggie loading is what I’m aiming for at the moment. Getting as many veg in as possible. In all shapes and forms packing in all the nutrients and vitamins. Topped off with a daily green smoothie. It’s like a little challenge, kind of similar to when your tracking your steps, and you just want to squeeze a little more in every moment possible, and try and beat yesterday’s number. Does any one else do that? Or just me? 😂
