Bok Choy & Bell Pepper Slaw, Pickled Veggies
💁🏻 Bok choy is sometimes called a “soup spoon” because of the shape of its leaves. This veggie is packed with vitamins A and C. In fact, just one cup of cooked bok choy provides more than 100% of the recommended dietary allowance (RDA) of A, and close to two-thirds the RDA of C.

💁🏻 This recipe works best with over-ripened bananas, but did you know that prior to ripening, bananas are rich in resistant starch. As the fruit yellows, the starch converts into sugar, giving bananas their signature sweet flavor. So the more yellow the fruit is, the less resistant starch it will have. Since underripe bananas are a bit bitter, I suggest adding them into a smoothie, or yogurt parfait with other fruits and veggies to mask the taste.
Breakfast was yet again another smoothie bowl. Jammed in as many veg as I could this morning. Cauliflower, beetroot, cucumber, purple kale and herbs fresh from the garden along with apple, banana and nectarine. Topped off with kiwi fruit, strawberries, passion fruit, watermelon, hemp seeds and some cheeky protein cookie dough balls. Best way to start the weekend 🌱
Min juice häromdagen blev en ”misslyckad” färgkombination av morot och grönkål = avloppsvatten. Den var visserligen god men när frukosten blir även en fröjd för ögat 👁 mår magen ännu bättre 💕

💁🏻 Cruciferous vegetables like cauliflower, kale, broccoli and cabbage, are great sources of vitamin C and satiating fiber, but they can also make you bloated and gassy. This is because humans lack the enzyme that breaks down raffinose, a complex sugar that’s found in cruciferous veggies. So when these vegetables are digested, they are fermented by your gut bacteria that produce methane, carbon dioxide and hydrogen, which leads to gas. But don’t let that deter you, cauliflower is one of the richest sources of the cancer-fighting compound, glucosinolate, which works to reduce cancer-causing inflammation.
🏡💖🏡 It feels good to be home!! I obviously didn’t go grocery shopping yet 🚫🛒 but was able to throw this together with a leftover 🥑 avocado that a houseguest left behind (thanks! 🙏🏼) and my cupboard fixins. This brekkie is creamy, filling and the chocolate shavings 🍫 give it a bitter edge that serves my savory palette a happy way to start the day 😊☀️🥣 /м
