T H E "healthy version" of my go-to dinner during the good ole college days....Ramen noodles 😆 // found these organic rice ramen noodles at a local grocery store in the northeast--Shoprite and Giant--Whole Foods carries this brand too but at a higher price 🙄 • they are made with millet and rice for those of us with sensitive tummies and the ingredients are clean《SWIPE》to see back of packaging • I add a couple spices and organic tamari sauce to liken my taste buds a bit and sometimes add chopped chicken and veggies 😋 You're welcome 😊 *Oh and Publix has a different brand of "clean" ramen noodles with kimchi flavor and it's delicious! You can find it in the ethnic food aisle if i remember correctly
Pad Thai is surprisingly popular here in Costa Rica! It’s also a great choice for #vegans when eating out, and because it’s traditionally made with rice noodles, it’s also usually #glutenfree . This one came with you, peanuts and veggies and was only slightly spicy (I requested super mild cause I’m a wuss 😝). Trying out a new spot, beautiful restaurant in Ojochal with a jungle garden seating - perfect to connect with nature.
Was time yet again for one of my favorite go-tos. Veggie loaded omelet bake! Quick, easy, delicious and super nutritious. This time I threw in bell peppers, zucchini, asparagus, spinach, portobello, garlic and onion. Lunch time!!

Sip and Soothe. It's challenging to find quality broth without garlic and onions for my #lowfodmap clients. That's why I was really excited to find @nonalimfoods at my local health food store. Not only is this broth healing for the gut lining but it's also a great source of protein which makes these portable containers a great choice to tote to work! All you need is access to a microwave for heating. I also recommend adding a squeeze of fresh lime and chopped cilantro for more flavor. Have you ever tried bone broth for gut healing??
