Day 62. Cannot believe how far I’ve come! I may not have that 6 pack but I am so much stronger than I was yesterday & for me that’s awesome.
I love how much I’ve grown in these 62 days. I’m building a lifestyle not just making it through some workout program.
Habits take 21 days to create. I’ve worked hard to make some healthy ones. And I continue to work & grow.
You’re either moving forward, standing still or going backwards. I choose forward. I choose growth. I choose change. Definitely not easy. But most certainly worth it!
I have been a fan of @cottercrunch for a very long time! I’ve made tons of her protein balls—the birthday cake balls have been gifted to my loved ones time and again.
So, when she came out with a cookbook on superfood bowls I could not wait for it to arrive and to start trying recipes!! Tonight we grilled steak for Cary and salmon for me but I really wanted something other than a salad for a side. So...I went to my new #nourishingbowlscookbook for inspiration. Most of the recipes in the cookbook are meant to be a meal but can easily be scaled down for a side so I chose a risotto-style recipe and it didn’t disappoint! >Chili Garlic Cauliflower Risotto Bowls<

All ready for a big Sunday cook up. I have started allocating time each weekend for meal planning, shopping and food prep.
I find that I eat a lot better when I am organised and I am less likely to reach for a quick sugar hit when there are healthy meals on hand.
I always try to include a wide variety of colourful vegetables and fruits in my meals, alongside good quality fats and protein and I make as much as I can from scratch using nutritious whole foods.
This week in my meal plan I have included a number of recipes from @jasminehemsley @melissa.hemsley @hemsleyhemsley. I love their delicious, simple and wholesome meals.
If you would have told me 9 months ago that i didn’t need 140g of protein per day i would have laughed in your face. If you would have told me that I’d stop eating meat and not even crave it I’d laugh. If you would have told me i didn’t need a protein with every meal i would have laughed but here we are 9 months of eating plant based and 100% sure that I’d never go back. My skin is clear as can be, my hair is growing, my energy is GREAT and i honestly feel good about what I’m eating. I’m by no means a perfect “vegan”. Sometimes I’m like yolo and eat something and don’t read the ingredients. I slip up, make mistakes, etc. BUT i am making a difference and i am proud of myself for that. So this isn’t a post to tell you to give up meat, it’s a post to tell you to explore your diet, try new things, make small choices that add up. PS this is my dinner and it’s @moderntablemeals red lentil pasta, @traderjoes veggie meatballs/marinara sauce & sautéed veggies. Easy 30g of plant protein 🌱 #EatTheEarth

Created the best Buddha bowl today / grilled zucchini + onion in a curry and teriyaki sauce / on top of a bed of kale with garlic hummus, pumpkin seeds, alfalfa and garlic sprouts and drizzled with siracha 💫
Pretty sure this is the best ramen I have EVER had. @ramenshopoakland hosted tsukemen and ramen champion of Japan, Tomita-san, in their kitchen this weekend. Reps from the city of Ise were there handing out sake and green tea samples, which was so lovely.
This ramen was unreal - the broth was super rich broth. Your eyes don’t deceive you, that’s BUTTER there next to the egg. The ramen noodles had so much bite to them, as a good noodle should. And buried under those greens were cauliflower, cabbage, and ground pork belly.
Unpictured matcha kumquat muffin was consumed after this. 💯
This is what I️ call the perfect way to end the night!! Vanilla freeze topped with coconut and raspberries and alllll the chocolate sauce 👅 I wish I could eat these every day....but my wallet might hate me!!
Day 5 of BLUES + PURPLES was awesome! Can’t believe we are almost done with this series. It’s been beyond fun. I’m hoping the girls don’t think this will be a normal thing! If you want to know what this is all about, go back to the “rainbow” post and read on! It’s kinda like a project or challenge.
Here’s the deal:
1. Gather, shop, hunt for all things blue and purple, fruits, veggies, snacks.
2. Grab a big ass plate or board and load it on.
3. Get excited. Get your littles excited.
If you think they won’t eat anything, wrong. It’s up to you to make it sound fun by explaining it in an enthusiastic way. If they try it and spit it out. That’s AWESOME because they tried! Who’s in!? Life has been so busy but so fulfilling the past few days, my meals have been super quick and easy but still full of delicious veggies and all the vitamin and minerals they contain. This is my breakfast this morning which was put together on the fly because I was running late for a church event - which was so eye opening, beautiful, challenging, and refreshing all at the same time 💕 I’m still processing everything I learned spiritually this weekend but I just wanted to leave this picture right here ☝🏻 I hope everyone is having an amazing weekend and making sure to nourish their bodies with deliciousness.
