Potato Soup. A crazy cold front hit South Texas while my boys were are school. This is the easiest soup.
🌿Chop half an onion and 5-7 (yes, that many. #eatgreen ) stalks of celery. Add parsley, garlic, sage, salt, and pepper. 🌿Sauté in a hot soup pot with evoo. Add two bags of Trader Joe's shredded potatoes. Stir and cover. Let cook.
🌿Add a box of organic low sodium vegetable stock. Bring to a boil and simmer. Add another half a box. I have added coconut milk, but this already seemed really creamy. And I have a middle child who is anti coconut. 🚫🚫
Got home from work so famished from forgetting lunch (but I was saved by the skinny pop in my car and stash of blackberries in the break room) that I was so happy for the leftover roasted veggies in my fridge! 😋 this bowl - roasted peppers, carrots, Brussels sprouts, and asparagus - topped with an egg and some avocado definitely hit the spot. .
I always recommend big batches of roasted veggies because they're delicious and knowing they're in your fridge can save you from swinging by fast food on the way home. I keep fresh and hard boiled eggs on hand at all times for a quick protein fix. Recently loving @thehappyeggco because of their free range policies. And always those farmers market veg 😋 .

I'd first like to start by saying thank you to Trader Joe's. Without them, this delicious discovery would not have been possible.
So... you know how Trader Joe's has the food sample section? (It's amazing and super slept on). I stopped there one day while grocery shopping and stumbled on this soup. It's incredibly simple to make and taste so good I don’t want to stop eating it. I've been taking it to work with me for lunch this week and my co-workers have been sniffing and peering into my plastic container ooohing and ahhing like they've never seen soup before 😆 #officeenvy .

Hoje eu corri que nem uma louca em casa, dia de lavar a roupa e parece que as crianças tem como objetivo principal não te deixar terminar nunca pois sempre fazem questão de fazer e querer tudo junto e ao mesmo tempo pra dar um toque especial, justo nesse dia! rsrsrs.. 😅
E claro, no mesmo dia q to morrendo de vontade de comer TUUUDO que existe e com cobertura por cima. 😁
