Chickpea-pasta bake with loads of veggies and herbs 😋😋😋😋
The last days were a bit too rainy for the Sunshine Coast 🤔🌦 humidity is very high and that makes any activity quiet hard 💦even cooking 😅 nevertheless, I did it 💪🏼
250g chickpea pasta
1 small zucchini
1 glove of garlic
2 big mushrooms
400ml cashew cream
Pinch of nutmeg
1/2 tsp mustard
Fresh basil and thyme
Salt and pepper to taste
Chop veggies into cubes, mince garlic. Roast onion and garlic in some olive oil and add remaining vegetables after 7-10 min. Roast another 5 minutes and deglaze with cashew cream. Bring to a boil, add spices, combine well.
Place pasta in casserole dish, pour sauce on top, combine well and put into the preheated oven (170 *C) for about 30 minutes. Of course you can add a layer of vegan cheese but I love that crispy pasta layer on top 😍Serve with fresh salad.
I was hungry after stopping at the pub after work. When I got home I made this plate of yumminess! BBQ mushroom patty topped with almond provolone, quick dill pickled cucumber and pink pickled turnip. Cauliflower wings with spring onions, almond provolone, sriracha mayo and radish. Kale and carrot slaw on the side. Flavours were amazing 😉
