Chickpea-pasta bake with loads of veggies and herbs ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹
The last days were a bit too rainy for the Sunshine Coast ๐Ÿค”๐ŸŒฆ humidity is very high and that makes any activity quiet hard ๐Ÿ’ฆeven cooking ๐Ÿ˜… nevertheless, I did it ๐Ÿ’ช๐Ÿผ
#veganrecipe:
(Serves 3)
250g chickpea pasta
100g pumpkin
1 small zucchini
2 tomatoes
1 onion
1 glove of garlic
2 big mushrooms
400ml cashew cream
Pinch of nutmeg
1/2 tsp mustard
Fresh basil and thyme
Salt and pepper to taste
-
Chop veggies into cubes, mince garlic. Roast onion and garlic in some olive oil and add remaining vegetables after 7-10 min. Roast another 5 minutes and deglaze with cashew cream. Bring to a boil, add spices, combine well.
Place pasta in casserole dish, pour sauce on top, combine well and put into the preheated oven (170 *C) for about 30 minutes. Of course you can add a layer of vegan cheese but I love that crispy pasta layer on top ๐Ÿ˜Serve with fresh salad.

I was hungry after stopping at the pub after work. When I got home I made this plate of yumminess! BBQ mushroom patty topped with almond provolone, quick dill pickled cucumber and pink pickled turnip. Cauliflower wings with spring onions, almond provolone, sriracha mayo and radish. Kale and carrot slaw on the side. Flavours were amazing ๐Ÿ˜‰

Stir fry noodles for my brothers party ๐Ÿœ๐Ÿœ Ingredients; (feeds 6)
2 tbsp soy sauce/tamari
1 tbsp maple syrup 
1 thumb grated ginger 
1 grated clove of garlic (optional)
1 tsp corn starch 
1/2 cup water
1/2 tsp turmeric 
Pepper 
Vegetables of choice, I used red pepper, green beans, carrots and baby corn.
6 bundles of precooked noodles of choice 
Method; 
Start by sautรฉing the ginger and garlic in the soy sauce until fragrant (careful not to burn). In a cup mix the water and corn starch, then add to the pan. Add the vegetables to the pan and stir well to coat in the sauce, then cook until hot. Add in the precooked noodles.  Let sit for a few minutes to soak in the flavours. Feel free to add chilli sauce or sesame seeds etc ๐Ÿ˜Š Enjoy โค

First, mix 3-3.5 (start with 3 and add more if needed) cups flour of choice (teff
is my favourite, but buckwheat works too), 1 tbsp of cinnamon, 1.5 tbsp of ground ginger, 1 tsp vanilla essence, and 2 tsp of mixed spice (cloves, nutmeg, cardamom etc). To the dry mix add 1/2 cup of whisked almond milk, 3/4 cup maple (or date) syrup. Mix until you can form a rollable ball. 
Use your hands to bring the cookie dough together. If it's too sticky or soft to roll, chill in the fridge for 10 minutes. 
Roll out on a silicon mat or floured surface and cut into desired shapes.

Bake on a lined tray at 180C for 10-15 minutes depending on size. 
Decorate and enjoy ๐Ÿ’š .

Method;

Add in the soaked dates and vanilla, then process until the mixture forms a ball. 
Roll into bite sizes (this made 14) and press an almond into the centre.

1/2 cup maple syrup
1/4 cup water

2 tsp baking powder 
1/2 tsp baking soda 
1/4 cup cacao nibs to garnish 
Start by Preheating your oven to 150ยฐ๏ผฃ fan bake. 
In a food processor, blend the cooked sweet potato with the maple syrup, water and vanilla until smooth.
In a a bowl, mix together the dry ingredients. Add the sweet potato mix in gradually and stir well to combine. 
Use a spatula to help transfer the mixture into a lined tin, then sprinkle over the cacao nibs. 
Bake in the oven for 45 minutes or until firm on the outside and a little moist on the inside.

Curry with instant pappadums (they are so good!) for lunch ๐Ÿ˜‹ I probably have curry way too often but I'm in love with the spices, and turmeric is great for you ๐Ÿ‘ 
Single serve curry;

1/4 cup cauliflower, chopped
1 can of baby corn, halved and rinsed well
1/4 red pepper, diced 
1 cup fresh spinach 
1 cup almond milk 
2 tsp curry spice
1 tsp cumin
1/2 tsp ground coriander 
1/4 tsp turmeric 
1/4 tsp ground ginger
1/2 tbsp miso paste 
Black pepper
Lime juice

Put everything, apart from the almond milk and miso, in a pot and bring to the boil, simmer until the cauli is tender, then remove from the heat and stir in the almond milk + miso. Serve over rice or noodles ๐Ÿ˜‹

My family were complaining that there has been a distinct lack of sweets in the house ๐ŸŒ Since I started baking for a cafe I haven't done much at home ๐Ÿ˜… But I whipped up this cake last night to try and appease the hoards; 
1 cup flour of choice
1/2 cup golden syrup maple syrup 
1/3 cup cacao or cocoa
1 tbsp ground chia or flaxseed
2 tsp baking powder
1/2 tsp baking soda
1 cup almond milk 
Preheat your oven to 150ยฐ๏ผฃ fanbake. 
Sift all of the dry ingredients together into a large bowl, then gradually add water mixed with the syrup until the mix becomes a thick but pourable consistency.
Pour the batter into a lined or greased cake pan. 
Bake for 35-40 minutes, until the top is firm and the center is no longer gooey.  Let cool for 10 minutes in the cake pan, then remove and allow to fully cool before cutting. Top with chocolate glaze and almonds ๐Ÿ˜Š .

Making Japanese Tofu Curry tonight ๐Ÿ˜Œ old recipe, but a family favourite ๐ŸŒธ 
Recipe (makes 4 serves); 1 cup of peeled diced potato 
1 block of @tonzufoodforlife tofu 
2 large peeled diced carrots 
1 cup of chopped green beans 
3 tbsp miso paste 
2 tbsp curry spice 
1 tsp cumin 
Rice to serve 
Start by boiling the potatoes in a large pan or pot for 8 minutes, then add the carrots and pumpkin and cook another 2 minutes. 
Add in the rest of the ingredients, apart from the miso, and cook until the veg is all fork tender. 
Turn off the heat, and dissolve in the miso paste. 
Serve over brown rice with a side of greens ๐Ÿค—๐Ÿ›

Recipe (makes 16 small balls)

1 cup of buckwheat groats
1/2 cup soaked dates
2 tsp vanilla 
Dark chocolate to drizzle over top 
Method;

Start by breaking down the buckwheat in a food processor.
Add in the rest of the ingredients blend until the mix sticks together. 
Roll into balls, drizzle with melted dark chocolate and leave in the freezer to set firm for 20+ minutes. 
Dust with powdered date sugar and enjoy ๐Ÿ’• .
