I can't remember the last time I had banh khot, Vietnamese mini savory rice cakes (tastes like #banhxeo bites). So I made some for the first time! It was really easy to make/veganize/#glutenfree . 😋

Lil break-fast! Southwest tofu scramble(used walnut meat that I had from last week), avocado, and a fruit smoothie with a handful of hempseeds added. No protein deficiency over here!

No animals were harmed in the making of this delicious meal! The taco "meat" is actually walnuts and mushrooms and some other stuff. Still working on the recipe but this came delicious and yes the 4 year old ate it! There is massaged kale underneath. I'm so full! Lol

This....is....AMAZING! I looove basil! Like seriously love it! I could eat basil every single day. Like the best feeling ever ia when my boo hits me with, "Baby I got you some basil from the farmers market!" Lol If you have a Trader Joe's near you I def recommend it! I just added it into some buckwheat soba noodles, sundried tomatoes, and black olives. It was yummy

1st meal of the day! Spinach, 🍌, 🍓, date, unsweetened cacao powder, and water is the base. I've been super dedicated to making sure I have leafy greens with every meal. Spinach is my fav but I bought some kale and spring mix as well! *

Trying to get better at eating breakfast BEFORE morning workouts, I got into a habit of fasted cardio there for a while but didn’t see any real benefit. In fact, all I really experienced was fatigue and feeling light-headed 🤷🏼♀️

Looks like oatmeal right?? It's not. It's actually apples, banana, dates, and vanilla blended together. Topped with cinnamon almonds and raisins. Next time I'll use 1 date instead of 2 it was a little too sweet for me. I'll also add some ground flax or chia seeds to up the fiber! *
