Six Hour Roast Shoulder of Lamb: so, newsflash...I haven’t really cooked today, other than preparing a vegan filo spiced potato pie (Patates Böreği) to take to my sister and brother-in-law’s house, and if you’ve seen my stories today then you would have seen that they cooked for me. So lovely, and such a wonderful family afternoon. However, I think I do my fair share of cooking, and so I thought I’d share perhaps the most popular recipe from last week’s supper club; my six hour roast shoulder of lamb. -
Preheat oven to 140C. For the marinade, mix together 2 tbsp finely chopped fresh mint, 1 tsp each oregano and paprika, 4 tbsp extra virgin olive oil, zest and juice of 1 lemon, 1 tbsp honey and 2tbsp red wine vinegar, 2 tbsp pomegranate molasses and a good pinch of salt and pepper. Spoon half over a 1.8-2kg shoulder of lamb, reserving the other half for later and throw in the squeezed lemons to the pan as well as 1 whole garlic bulb cut in half. Place a tight foil tent over the lamb on the lightly greased baking tray, and place on the bottom tray of the oven. Baste every hour or so and cover back tightly with foil each time. After 5 1/2 hours, baste again, but don’t put foil back on, whack heat up to 180C and blast for the final 20-30 mins. When cooked, allow to rest for 15-20 mins before serving. Add another 1 tbsp each red wine vinegar, extra virgin olive oil and pomegranate molasses and 2 heaped tbsp finely chopped coriander to the remainining marinade, ready to spoon over the lamb as you please (or “drink it like soup” like my friend said she was doing last Saturday night because it was so good). Pomegranate and toasted pine nuts sprinkled over just finish it off with the remaining mint sauce marinade.
