Food is something that we all share! It allows us to connect with people via the common experience of eating. It can give us a feeling of belonging to a group or open us up to new experiences. Eating allows us to experience elements of different cultures and eating together can help us to relax. Conversation can also help us to eat more mindfully, as it slows us down allowing us to notice our hunger cues 🙌🏻
So go and eat dinner with your family, get coffee and cake with friends, plan a picnic or host that dinner party you are always talking about hosting! .

Today I did a demo on easy ways to add more fruits and veggies in on a budget. We made a chicken salad (with Greek yogurt instead of mayo 😱) packed full of red grapes, celery, and onion. Then we whisked up an egg scramble with black beans, green chilies, and tomatoes.
Talk about eating the rainbow! 🌈 All the groceries for the class cost $17 and took an less than an hour to make. Eating healthy is as simple as adding bountiful produce to foods you’re already cooking. 🍇

Tired of spending too much time in the kitchen? This breakfast taco is perfect for any meal and took less than 10 minutes to make! •
-Chop up 1/4 of a small onion & 1/4 red & yellow pepper and sauté in a little oil on medium high heat (cover for first 3 minutes to heat up quicker) and then continue to mix until onions are translucent and season with salt and pepper
- spread 1/4-1/2 avocado on tortilla
- fry one egg 🍳 - place veggies on top of 🥑 and the egg on top and sprinkle with goat cheese 🧀
- DIG IN 😋🌮

I was amazed with the awesome foods that were created in the kitchen! And my tummy was pretty happy too 🤗

I almost always start my day with a cup of coffee but this morning I decided to trade in my coffee for some Golden Milk instead (yikes!) Golden Milk is milk that has been heated with turmeric along with other spices which have a very high nutritional and antioxidant content. This beverage is said to be associated with MANY heath benefits including reduced inflammation, reduced pain, increased immunity, etc. My combo: cashew milk🥛+ turmeric + cinnamon + vanilla + honey🍯
My thoughts? 1. Not what I expected it to taste like (It was actually much more spicy than sweet, but still tolerable) and 2. I didn’t expect it to actually “work”. (I have had terrible neck/back pain for 3 days straight and now it’s randomly gone almost immediately? 🧐 Placebo effect maybe? The world may never know) I’d say 6 out of 10 in taste & 10 out of 10 in nutrition. Now, back to ☕️
Woah! This is a veggie burger for non-vegetarians, y’all. This is a True Burger veggie burger. Add cheese, onions, lettuce, tomato and mustard and you have my order. I can’t tell you the last time I had a beef burger, but I’m a connoisseur of veggie burgers.
In case you don’t know...I don’t eat beef. I don’t really have anything against beef. In fact I absolutely acknowledge the nutritional benefits eating beef in reasonable quantities as part of an overall diet. But I was a vegetarian for a lot of years. When I tried to reintroduce beef, I discovered that I really don’t like the taste or texture. Plus, I really like cows. 🐮 all that said, I really do like a lot of foods that are typically made with beef - like meatballs, meatloaf, AND burgers. I’m so happy there are a ton of delicious options for vegetarian versions of some of my favorite carnivorous foods.
BTW, sure, I could totally make this from scratch. But I ain’t got time for that, yo.

My top 10 reasons to include pasta in your diet on the regular:
1. Pasta has been eaten for hundreds of years by various cultures throughout the world 🌎. But most notably, it is a staple of the Mediterranean diet, one of the most well-researched, healthiest eating patterns in existence.
2. Pasta is a simple, plant-based 🌱food with low environmental impact from farm 👨🌾🚜 to table🍴🥄. Ex: 1 calorie from grains can be obtained from 2.2 calories of fossil fuels vs 40 for beef or 14 for milk*. 3. Pasta (from durum wheat) is minimally processed and the processing that does occur improves nutritional profile by reducing starch digestibility and thus glycemic response. The GI (glycemic index) of pasta is less than oatmeal and quinoa...what?!
4. Pasta has a long shelf-life, so it is rarely a food that you would purchase and have to throw out if you’ve forgotten it, so less food waste.
5. It’s affordable! Hello 1$ for a box 📦 big enough to serve a family.
6. Pasta is versatile. Almost any cuisine can be made to include pasta with a wide range of flavor profiles and add-ons.

Roasted zoodles bolognese with grated parmesan and red pepper flakes really hit the spot this chilly spring week. For a quick meat sauce I sauté ground lean beef or turkey with onions and garlic and then I add @raoshomemade or @lidiabastianich basil tomato sauce.
Best part of traveling? Finding good food in unexpected places. You’d never guess, but there are some delicious tacos underneath this bridge. ⠀
If you’re ever near Red Cliff, stop at Mango’s for fish tacos with the best seasoning. (They also had Rocky Mountain oysters on special, in case you're interested.😉)⠀
It's peaceful, close to ski hills at @vailmtn and @beavercreek, and not too far from hot springs (and more good eats at @thepullmangws) in Glenwood Springs. Perfect little mountain getaway!⠀

1️⃣ I am a born & raised Jersey Girl. I tried living near NYC for a few years in Hoboken, but my heart belongs to the beach. I’m now a permanent resident of the Jersey Shore and absolutely love living in a shore town because I feel like I’m on vacation all year long
2️⃣ I’ve had my right ACL repaired twice. I injured it during dance class when I was in college. The surgery & recovery was so fun I decided to do it all again in 2010 by re-tearing the knee at a boot camp class
3️⃣ Although I casually dabbled in yoga in my younger years, I didn’t become serious about it until I was getting married and wanted to get in shape for my wedding following said ⬆️ knee injury. I said I’d stop after the wedding. That was over 6 years and almost 500 hours of advanced yoga teacher training ago 🙏🏻📿🕉 4️⃣ When I grow up I want to be a mermaid 🧜♀️Or an aerial performer in Cirque de Soliel
5️⃣ The only person in the world who can handle all of this ⬆️⬆️⬆️ is my PIC in life @tockstar. My hubby makes life fun, spontaneous, and never boring. Buffalo Cauliflower Bites
This is another #momwin ! Lucky for me, my kids like cauliflower but when I flavor it like buffalo chicken wings they LOVE it!
- 1 head of cauliflower, cut into bite sized florets
- 1 tablespoon garlic powder
- 1 tablespoon ghee (or butter)
- 1/2 cup Frank’s RedHot hot sauce - dash of salt and pepper
1. Preheat oven to 450 degrees F.
2. Line a baking sheet with foil and spray with olive oil spray
3. Combine garlic powder, ghee, hot sauce, salt and pepper in a bowl.
4. Place cauliflower florets in a ziploc bag and pour sauce combo on top of cauliflower. Seal the bag and shake bag to fully coat cauliflower.
5. Transfer to baking sheet and bake for 20-25 minutes.
6. (Optional) I like to place them under the broiler for a couple minutes to make them a bit crispier. Just make sure to watch them so they don’t scorch! 🌋

Fruit, milk, candy, grains, veggies... they all have a carbohydrate component! ...I say this to make carbs less scary 👻 Carbohydrates remain the most efficient fuel for the brain and body. Which makes sense when we remember that most types of foods contain some! .
Is there a one size fits all approach to eating carbs? No. But when you hear someone preaching to eat “high this,” or “low that,” take a step back and look closely at what it really means. Are you giving up entire food groups? Are you giving up vitamin and fiber-rich foods? .
Nutrition PSA: We were all scared of fat in the 90s. Carbs are just this era’s fat. You are more complex than a single nutrient!
