Such an exciting day with beginning the transition into my new job 🤗 It’s such a good feeling loving where you work and who you work with. I feel super lucky to love what I do! 🤓🥦🍓🥑 Anyways, my dinners have been all over the place this week. I’ve kind of just been throwing whatever is in my fridge together. This is a messy bowl of “cheesy” spaghetti squash with broccoli and zucchini noodles! The “cheese” sauce is made of Japanese sweet potato, nutritional yeast, almond milk, garlic, lemon and salt. #tbt to the PCRM International Conference on Diabetes. This is Susan Levin, a registered dietitian and the director of the nutrition department at PCRM. Such a knowledgable person in the world of plant based nutrition. She was a HUGE inspiration as to why I went into dietetics. I had the chance to interview her (personally not for a video) about dietetics and she was such a great person giving me valuable feedback for my journey ahead. Also, we both were Astronomy majors before switching to dietetics. Just random fun fact for ya ✌️
I used to think being strong was all about swallowing your own problems. Building a wall were you would bury your most honest thoughts. And drawing a smile in your face even when your insides wanted to crumble.
I thought vulnerability was being weak.
If only I had known how wrong I was.
Truth is, I was scared.
Because being vulnerable is the BRAVEST thing in the world. I have learnt now, that only STRONG people are vulnerable. Suddently, I found myself admiring those who are able to be truly honest with themselves and with the world. Be able to open their heart with no fear of people sneaking inside. I am so lucky to call some of those people my friends. I am so lucky for having learnt that now. And finally, slowly releasing those chains that I so had made sure were locking the box hiding all my secrets. Letting go all the weakness that i hadn’t had the courage to face.
And now that I open my heart, I realize how much it needed to breath.
Facing my biggest fear, I let tears decolour my skin for everyone to see inside my transparent shell. I leave my heart wide open, allowing anything to come in and out.
And while I free my insecurities to the world with shaky legs, I feel free.
Stronger than ever.
That’s not vegan!! 😱 As many of you know I’ve been vegan for about 6-7 months now and some of you may know that I also have a very sensitive stomach. I can’t quite figure out what makes my stomach act up and when it does it hurts so bad and I get super frustrated. I’ve also realized that I’ve started to think that animal products aren’t healthy, which isn’t the case at all!!! I’m glad I caught myself on that thought since I want to be an RD and not everyone is going to want to eat completely vegan or plant-based which is completely okay and can be very healthy!
So here’s to the end of my vegan journey 👋🏻. I still eat mostly plants and will most likely not eat red meat, but I’m going to let my body thrive on whatever it wants, no restrictions. 😊

The Journal of Agricultural and Food Chemistry published a study in 2005 that discovered there are more flavonoids in the outer layers of an onion compared to the inner layers. Simple yet delicious 🥑🍳 Avo toast, scrambled eggs, and sautéed chicken sausage with spinach and red pepper. I’m currently on the hunt for a good chicken sausage. Since sausage is processed most will contain some sodium. Any lower sodium chicken sausage suggestions?!
Turkey Soft Tacos w/🍄 4 added VitaminD Have you ever found turkey anything to be.. well... tasteless? My tip/trick to adding more rich, hearty, meaty flavor to ground turkey is by adding mushrooms. Two ways: 1) blend baby portobellos (about 5 per 1/4 lb ground turkey) w/water and 1/2 RED bell pepper if you only have a blender OR 2) chop mushrooms and red bell pepper in a food processor or Ninja -> pour or spread over ground turkey and add at least 1/2 teaspoon of SMOKED paprika + 1 tblspoon tomato sauce
