It is a process to turn barley into malt. Malt is made from grain that is alive and grows wild without a diligent maltster. We have been knee deep in grain! . In the posts coming up we want to give you a close up of our process, #MaltsJourney . . All malt starts off as grain. Our grain of choice is two-row barley for its lower protein content and more fermentable sugars. There are hundreds (if not thousands) of two-row varieties. We malt one farmer, one field at a time. We never mix barley varieties, farms or harvests. We have malted barley from Copeland, Metcalfe and an exclusive experimental variety from UC Davis.
We have partnered with family farms in the Sacramento Valley to grow top-quality, sustainably grown barley. The green barley stalks are young barley plants, maturing into the golden fields of barley ready for harvest. Hill-side harvesting is no easy feat. Once it captures California's terroir, the grain gets delivered to our malthouse. . This is where the maltster's process begins. We are creating a local community and culture that connects farmers, brewers, distillers, maltsters and you, the drinkers. .
