Stuffed Capsicums Recipe.
Ingredients 6× capsicums deseeded, put tops to one side. 500gms mince (any mince you like I alternate between beef, lamb & pork) , tin diced tomatoes, 1/ 2 cup water,3/4 cup rice,1tsp minced garlic,1 tablespoon dried oregano, 1/ 2 cup fresh parsley, 1/4 cup fresh mint,1 large onion diced & 1 tablespoon olive oil plus extra for drizzling.
Preheat oven 180 degrees & line a tray with baking paper. Heat olive oil on stove top, cook onion & garlic 2 minutes, add mince until brown. Add all other ingredients & cook for 8 minutes until thickens. Add mixture to capsicums, place capsicum tops on, drizzle with olive oil & cook for 45 minutes. This recipe will have extra stuffing left over as Miss 15 & Mr 19 don't like to eat the capsicums. I always take leftovers to work next day for lunch .Enjoy.

4. Tomato and herb baked risotto.
5. Spinach, mushrooms and tomato with beef meatballs and a LARGE salad.

7. More BEANS. Roast veg, eggs and grilled tomato.
8. Protein pancakes with Greek yogurt and honey.
9. Turkey steak pizzas.

Zero waste dinner: tonight was all about eating up all the coconut products I had bought in a fever in a “coconut is good for you” phase. The rice in the middle was really old back of the shelf purple rice none of us really took to cooked in coconut milk and a bit of pink Himalayan salt. On the left cauliflower and potatoes fried in coconut oil past it’s BB date with a little ginger and turmeric powder and salt. On the right is the last to our organic chicken from Costco battered in dried coconut about to expire, eggs, milk and flour which I baked and then fried in the oil leftover from the veggies. Not the “lightest” meal but delicious and got a bunch of stuff out of our cupboard. I love coconut everything I won’t lie but like a lot of vegetarian alternatives it comes from really far away and I haven’t found a fair trade organic brand yet so I’m trying to cut back a bit and find local alternatives in the meantime. #zerowastecooking#cookingfromscratch#organicfood

Asian Salmon with Creamy Avocado Zoodles
4 pieces Salmon, rinsed and patted dry
1/4 C olive oil
2 T Sesame Oil
2 T Soy Sauce
2 T Brown Sugar
2 T Rice Wine Vinegar
2 T dijon mustard
2 Garlic cloves, minced
1 T minced ginger
4 green onions, washed and diced thinly for garnish
Mix all ingredients but green onion together and pour over Salmon. Let marinate 12 hours. When ready to grill, have the following ingredients ready! Grill until almost done.
1/4 C Honey
1/2 t ground ginger
1 t Soy Sauce
1 t Sesame Oil
whisk all ingredients together in a small bowl and set aside until ready to use.
2 T Toasted Sesame Seeds
When Salmon is taken off the grill place in an oven proof dish and top with the green onions and the glaze. Broil for 4-5 minutes. Top with Sesame Seeds and broil for one more minute. Serve immediately.
