Goooood morning!! Quiet Saturday and Sunday mornings are my favorite! Taking 20-30 minutes over the weekend to plan my upcoming week helps reduce my stress and allows me to be more productive throughout the week. ⚡️It ensures I have healthy meals to eat each night and there’s less temptation to order takeout or grab something unhealthy. ⚡️Scheduling workouts around after school meetings and commitments means I won’t miss any. ⚡️Tracking deadlines and making a plan for accomplishing the task enables me to stay on top of projects that need to be completed.
What’s your favorite way to spend Sunday morning?
Even though it’s March it feels like we’re back in the depths of winter. This delicious pasta dish is quick, hearty and comforting. Plus all the ingredients were in the store cupboard so huge bonus 😊Lemony, chickpea pasta which makes us feel we’re somewhere between the Middle East and Italy !
Recipe credit: @nytfood @melissaclarke (we upped the amount of garlic, onion and rosemary and added lemon juice to the original recipe, our modifications included below ).
YOU WILL NEED
Kosher salt, as needed
Short sturdy pasta (eg fusilli)
2 cups cooked chickpeas, home-cooked or canned
1/4 cup extra-virgin olive oil
4 garlic cloves, smashed and peeled
1 onion, diced
3 tablespoon finely chopped fresh rosemary leaves
Pinch of red pepper flakes, plus more as needed
1 1/2 cups chickpea cooking liquid/stock
3 cups fresh parsley leaves (from 1 large bunch)
2/3 cup grated Parmigiano-Reggiano
1 tablespoon unsalted butter
Finely grated zest of 1/2 lemon plus juice
Ground black pepper to taste
Boil pasta until al dente
While the pasta is cooking, prepare the chickpea sauce: use a potato masher to fork to lightly mash chickpeas ; they should be about half-crushed.
Heat oil, add garlic cloves, onions, rosemary, red pepper flakes and a pinch of salt. Cook bout 10 minutes. Then stir in chickpeas and the cooking liquid, stock or water. Bring to a simmer and cook gently until most of the liquid has evaporated, about 5 minutes.
Stir in pasta and parsley, and cook until the pasta has finished cooking and is coated in the sauce, 1 to 2 minutes. Quickly toss in cheese, butter, lemon zest, black pepper to taste and salt if needed. Drizzle with olive oil and shower with additional cheese before serving.

Ciao ciao Cosmoprof, ci vediamo l'anno prossimo 😊
How many times have we heard this: "go for your dreams" "make it happen" "reach for the stars" you see that everywhere from motivational videos and quotes to celebrity interviews... Well that's well and good but isn't that what 99% of us want already? Did you ever hear someone not hoping to achieve theirs?
While the motivation to achieve our dream goals are here inside everyone, why are so few people taking action everyday to make it a reality? Limiting beliefs! I believe these are the most common piles of bullshit:
1. "I don't have time": Sell your TV and delete FB on your phone (not your account, just the app on your phone, you'll check your PC at night). Guess what you now have an extra hour a day.
2. "I don't have money": Most billionaires started with nothing. They didn't need money to start, neither do you. If you think you do, you don't. If you still think you do, start small build it up. Go to AliExpress.com, they sell EVERYTHING for 10 times cheaper and free shipping. Buy from them and sell on FB, IG or your local community at local price. You can make $100-300 a week doing that. Also read Rich Dad Poor Dad by Robert Kiyosaki and Unshakeable by Tony Robbins.
3. "I don't know how": Find people who are already living your dream and analyse what they do. Do the same. Buy the best books on the subject and YouTube how tos. We are 2-3 people away from anyone in the country. A friend of a friend knows that person already kicking ass in your dream category, reach out to them, be polite, try to offer something in return, ask for advice, most people are willing to help.
Thought I'd get a little practical and share what I found useful for me. The internet won, we don't have any excuses now. In 1999, yes. Not today. Make it happen. °°° °°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°°

Hey 👋 Over the last six months I’ve been on a journey... that journey is to become a Freelance Social Media Manager.
Part of my training is to run a social media campaign, which is what you’re on right now!
Today is the last day of my campaign as my training comes to an end. I just want to thank you all for your support during the past few months. I also want to give a big shout out to my September cohort of Digital Mums and in particular the six inspirational women I have had the pleasure of sharing this journey with. I’ve loved sharing motivational posts on here and hope you’ve been inspired to move more, eat better and be mindful. 💕🧘🏼♀️🥑🏃🏼♀️
Whilst it’s the end for this campaign, you might want to check out my IG page @talesofamothersdaughter . I’ll be sharing similar content, (along with the other woes of life) maybe just a bit cheekier and naughtier! (description in the comments). - -
