I knows it's dark meat, but I just can't eat chicken breast every day, I have to have a little fat here and there. IMO, there are worse things I could be eating 😏

-6 chicken thighs 🍗
-4 fresh basil leaves🍃 (chopped)
-1/2 tsp rosemary
-1/2 tsp Italian seasoning (oregano & thyme)
-1/2 tsp lemon pepper seasoning🍋 (I didn't have lemon juice. If you do use 1tbsp➕ pepper)
-1 tsp garlic (minced)
-2 tbsp red wine vinegar🍷
-2tbsp olive oil
-1/2 onion (sliced)
-
-MARINATE chicken & onions in all of the ingredients for an 1hr or cook immediately
-PREHEAT oven to 375
-SET stove top to Medium-high heat. DRIZZLE olive oil in Pan, sear chicken until lightly browned on both sides.
-PLACE chicken & onions on a baking sheet lined with aluminum foil (sprayed with nonstick spray)
-BAKE for 50mins-1hr
-
I ate this with my delicious Cilantro lime rice (minus the Cilantro because I was lazy) and a salad with ginger dressing. Both recipes are in my previous posts 🤤 .

Experimenting with my pressure cooker!!!! I have had a pressure cooker and really only used it for my rice 🤦🏽‍♂️. I bought 3 chicken Breast and seasoned with all organic  Himalayan salt, pepper, garlic power, onion powder, and paprika. Can easily do used on many dishes and have plenty to use for the week. .

I know I usually stick to posting recipes here, but I wanted to share some of the success I’ve had with the healthy recipes I’ve been making and sharing. Five weeks ago (about 4 months postpartum) I decided I was ready to focus on myself, my health, and hopefully lose the last of the baby weight I had gained with baby number three. I started paying more attention to the food I was eating. I didn’t go on a diet, I just tried to make sure I was eating clean, real food. I’m still breastfeeding so I had to make sure I was still getting enough good calories to keep up my supply. I started working out at least five times a week. Sometimes during nap time, sometimes after kid’s bedtimes, but mostly with kids running around my legs. I’m definitely not a fitness expert so I used the Ease into 5k and Nike training apps (both free and both highly recommended by me!) to set up a workout routine and schedule. Since I started I have lost about 8 pounds and am feeling so much better about myself and my health. I can’t say enough about the importance of physical activity for mental health as well, especially since I’m home with three little kids every day!😂
I know that a big part of my success in reaching my goals has come from my workouts, but an even bigger part has come from my kitchen! I hope that by sharing the real recipes I make every day that they can help you too!🍽🏋️‍♀️🥗👩‍🍳

Spring Clean Salad
Ingredients:
_
Dressing:
_
3 Tbsp. lemon juice
.
1 tsp. Dijon mustard
.
1 tsp. chopped fresh mint
.
1 tsp. chopped fresh dill
.
3 Tbsp. extra virgin olive oil
1 bunch  kale, 2 cups (you can discard the ribs)
.
1 Tbsp. pine nuts
.
1 ruby red grapefruit, peeled and segments removed from membrane
.
1 avocado, pitted, peeled and cut into chunks
.
Sea salt and freshly ground pepper to taste
Directions:
.
Combine lemon juice, mustard, mint and dill in a small jar, and shake well.
.
Add oil and shake well again.
.
Toss kale with 4 Tbsp. of dressing in bowl. Add pine nuts and toss to combine. Divide among 2 plates.
.
Heap grapefruit segments and avocado chunks on top of spinach, drizzle with remaining dressing. Season with salt and pepper. Serves for 2

CASHEW MILK😍 my all time fave..stopped drinking it because I couldn't find any in the stores that didn't have flavors and preservatives in them 🙄😒👎🏽 so what do you do when companies poison your food? You make your own!
Blend half a cup of cashews with 6 cups water. 
Pour into mesh bag to strain all the liquid out. 
Pour back into blender. 
Add 6 or 7 dates. 
Dash of cinnamon and nutmeg. 
As much maple syrup as your heart desires (I didn't measure but guessing I put about 3 tbsp 🤷🏽‍♀️) And voila! Creamy delicious milk✨ 
Keeps in the fridge up to 5 days🌱

This is what a typical lunch looks for me! 🍽Open faced sandwich with veggies and hummus, grapes and some other protein side (like these roasted chickpeas or cottage cheese). Simple and easy. I wish I could have big luscious bowls of spinach, roasted veggies and salmon everyday, but it’s just not realistic with my schedule or budget 💸  Lunches are always my hardest for me to come up with, if you have a favorite/go-to, please share!! ☺️ happy Saturday all! ⠀

Wasn’t feeling the greatest last weekend, and pho is my go-to whenever I have a cold. Definitely considered ordering out, since the Vietnamese soup usually only sets me back around $10. Even better, I can almost always divide it up and eat it twice. Five bux for a meal is hard to beat.

But one day I watched a show about pho on the Food Network, and if I remember correctly, the broth contains sugar. Plus, I’m not really about that noodle life. I can definitely live without them. So, I decided to give it a go and finally make my own pho. If you know the correct pronunciation, that last sentence does not rhyme (and I love you).

D I N N E R:
Rare Steak Zoodle Pho
.
32 oz @Sprouts beef bone broth
2 C water
1 yellow onion, halved
2” piece of ginger, sliced into 3 lengthwise
1 stick cinnamon
2 pieces star anise
1 tsp fennel
1 tsp coriander
2 cloves
1 pod cardamom
2 tbs fish sauce
2 eye of round steaks, sliced thin
3 zucchini, spiralized
Lime, cut into wedges
Green onion, sliced
Cilantro
Basil 
Sprouts
Jalapeño, sliced
.
1. Broil one half onion and ginger in oven until browned on top. 
2. Pour broth and water into saucepan. Add onion, ginger and cinnamon stick. 
3. Load remaining spices into tea ball infuser. Drop into broth.
4. Bring broth to a boil, then reduce to a simmer and continue to cook for 30 minutes. 
5. Turn off heat. Remove all spices, onion and ginger; discard. Stir in fish sauce.
6. Thinly slice second half of onion. 
7. Ladle broth into a bowl. Add zucchini noodles. 
8. Serve with lime wedges, green onion, cilantro, basil, sprouts, sliced onion, jalapeño and rare steak on the side.

🍽 Guacamole & Egg Breakfast Bowl - 
1 egg room temperature
1 cup baby spinach leaves
1/8 red onion peeled and finely sliced
1 small piece toast chopped into chunks
1 tbsp sour cream
2 tsp sweet chilli sauce
Pinch black pepper
Guacamole:
1 ripe avocado peeled, de-stoned and roughly chopped
1/8 red onion peeled and finely chopped
1 tbsp chopped coriander/cilantro
Pinch of salt
Pinch of pepper
Juice of half a lime

1. Place the egg in a pan of cold water, bring to the boil, then simmer for 5-6 minutes. Turn off the heat and drain off the water. Leave the egg to cool (you can put it in some cold water to speed up the process if you like). Peel the egg and slice in half.
2. Now make the guacamole by mashing all of the guacamole ingredients together.
3. Place the spinach in a bowl, top with the guacamole, egg, slices of red onion, cubes of toast, a blob of sour cream, a drizzle of sweet chilli sauce and a sprinkle of pepper, then serve.

Optional - cut up a piece of toast and add to the bowl if you’re feelin’ crazy

Optional - you can also use egg whites instead of full eggs.

GARLICKY SHRIMP

Ingredients
1/4 cup extra-virgin olive oil
10 cloves garlic thinly sliced
1 pound large or jumbo shrimp peeled and deveined, tails removed if desired
3/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon smoked paprika
1 Pinch of cayenne pepper
Instructions
Heat the olive oil in a large heavy skillet over medium-low heat. Add the garlic and cook, stirring frequently, until softened but not browned. About 5 minutes.
Add the shrimp in a single layer, raise the heat to medium-high, and sprinkle on the salt, pepper, paprika, and cayenne.
Cook until the shrimp turn pink on the bottom, 2-3 minutes.
Flip and cook until the shrimp are opaque throughout, another 2-3 minutes. Serve hot.

📃 Ингредиенты:
🔹2 банана
🔹1 дл какао-порошка
🔹4 яйца
🔹10 фиников
🔹1 ч.л. разрыхлителя
🔹1/2 ч.л. ванили

▶️ Смешать все ингредиенты в блендере.
▶️ Выпекать торт 20 минут при температуре 200°C.
▶️ Украсить кокосовым кремом и ягодами. Можно подавать с пюре из манго.

🍤 + Zucchini Noodles Medley >>> I used the frozen zucchini noodles (Green Giant Brand) after cooking, add to pan with a tsp Kerrigold butter, minced garlic, dash of sea salt, basil, oregano, spinach + 1 egg to bind ———————————————
Take noodles out of pan, add sauce into pan (bring to light boil) add in shrimp, plate on bed of spinach & last but not least....add some 🥓!! BOOM! Cause it’s Friday!! •

🍽 Tuna Stuffed Avocados - 
Ingredients
1 avocado, halved and pitted
1 (4.5 oz) cans tuna, drained
¼ cup diced red bell pepper
1 tablespoons minced jalapeno
¼ cup cilantro leaves, roughly chopped
1 tablespoon lime juice
salt and pepper (to taste)

Instructions
1. Scoop out some of the avocado from the pitted area to widen the "bowl" area. Place the scooped avocado into a medium-size mixing bowl. Mash it with a fork.
2. Add the tuna, bell pepper, jalapeno, and cilantro to the mixing bowl. Pour lime juice over. Stir it all together until everything is well mixed.
3. Scoop the tuna into the avocado bowls. Season with salt and pepper.

1/8 tsp salt
zest of 1 lime

2 tablespoons taco seasoning of choice
Salsa
1 pint cherry tomatoes quartered
1 jalapeno minced
1/4 cup red onion minced
juice from 1/2 a lime
1/8 tsp salt
Other:
one 12 oz/341 mL can corn kernels drained & rinsed
1/4 cup shredded cheese cheddar or mozzarella
Instructions:
1.Cook brown rice according to package directions, adding the lime zest and salt to the cooking water.
2.Cook turkey over medium heat, tossing in the taco seasoning and breaking it up as you cook. Cook for 10 or so minutes, until cooked through.
3.Combine all salsa ingredients and toss together.
To assemble lunch bowls: -1/4 portion of cooked rice (roughly ½ cup)

🍽 Cajun Chicken w/ Coriander and Lime Rice -

Ingredients: • 3/4 cup dried long grain rice
• 1 Cajun seasoning
• 2 skinless chicken breasts
• 1 olive oil
• 1/2 red bell pepper deseeded and sliced
• 1/2 yellow bell pepper deseeded and sliced
• 1/2 green bell pepper deseeded and sliced
• 1 small brown onion peeled and sliced
• coriander (cilantro), roughly torn
Zest of 1 lime
• 1 avocado peeled, de-stoned and chopped

Instructions: 
1. Boil a large pan of water, add the rice and simmer for 15 minutes until the rice is tender. Pour into a sieve and leave to drain.
2. Whilst the rice is cooking, heat a cast iron griddle pan on a high heat and brush on a little oil.
3. Sprinkle the Cajun seasoning and pour half the oil on the chicken breasts and rub it in using your hands. Flatten the chicken breasts slightly with your hands and place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred and no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables.
4. Brush the rest of the oil on the griddle and place the peppers and onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred.
5. By now the rice should be cooked and drained. Fluff it up with a fork and stir through the coriander and lime zest.
6. Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado.
