Want to make guacamole to make your friends drizzle in anticipation?
Ripe avocados, mashed with a fork.
Cherry tomatoes quartered
Red onion, finely diced.
Fresh lemon juice, 1 Lemon for 2 large avocados.
Fresh coriander, leaves and stems, very finely chopped.
Spring onions, chunky chopped.
Malden Sea salt flakes.
Ground black pepper.
Optional ingredients: finely chopped garlic - I don’t use it.
Fresh chillies, finely chopped - I use that.
Sploosh of extra Virgin olive oil, I sometimes do and I sometimes don’t.
Mash (peeled) avocados with a fork, leave some chunks. Immediately add lemon juice and mix well. Add tomatoes, onions spring onions, coriander, chillies and season. Mix well. Add garlic and olive oil if using. Mix. Check seasoning.
Put in bowl, sprinkle with spring onions and/or finely chopped chillies.

So, this is one cold smoked salmon fillet (from lidl, comes as a pack of two), with chopped pak choi and spring onion salad (light on the spring onions). Then I added some #nutritionalyeastflakes (great source of micronutrients if they're fortified, and adds a nutty flavour), #sesameseeds , and finally I made a homemade dressing with #misopaste , tahini, #chillies , #soysauce , #honey , #ricewinevinegar and #sesameoil (I'm sorry, I can't remember the quantities, kinda regretting it now bc it was insanely good). I also had a slice of bread on the side. Oh it was heaven 👍 I really love these flavours so to me it worth investing in all of the ingredients, and they last quite a while (also everything is available at a larger supermarket, although I tend to buy my miso at my local "Asian foods" store). The nutritional yeast flakes I picked up at Real Foods, as my grandmother has been using them in her salad dressings since before I was born (they act like a thickener). #asianfusionfood#feelingupbeet ·

This year we are focusing our production on our four original hot sauces but Jared is busy with some R&D for next production season. This jar has been fermenting with purple daikon, Kim Chi juice and Mountain Mama! Can’t wait to crack this baby open!
