Yesterday’s lunch was quick oven cooked chicken tossed with some linguine. Was in a rush so left this in the oven and went to pick the kids up from school. Came back and it was done so just tossed in some boiled linguine and served with some salad.
Chicken curry linguine
1kg baby chicken cut into small pieces.
Blend 3 garlic, half onion, 1 inch ginger.
1tbsp curry powder
1 1/2 tsp salt
1/2 tsp turmeric
Mix everything up and leave to marinate for 1 hour.
Transfer to a baking dish and add tin tomato (puréed) and 2 tbsp olive oil. Give it a mix and cook in the oven for 1hr at 160c or 30mins at 200c.
Boil some spaghetti or linguine. Drain and leave aside once cooked.
Take the chicken out the oven once it’s done and add the spaghetti and mix. Add some chilli flakes to make it extra spicy.
