Montreal Chicken, Smoked Meat with Swiss. An idea I came up with some leftovers, and of course the breading is low carb. Coat your chicken in 1/2 cup mayonnaise, 3 tbs yellow mustard, 1 tbs sweetener of your choice all mixed together. Keep half for dipping. Then take 35 grams crushed pork rinds, 3/4 cup Parmesan Cheese, 1/8 tsp White Pepper, 2 tsp garlic powder, 1 tsp onion powder all mixed together, sprinkle half onto a glass casserole dish. Place coated chicken down sprinkle the rest on the chicken. Bake 30 min at 350, take out top with Montreal Smoked Meat and Swiss Cheese put back in the oven for another 10 mins. Made the most delicious coconut chicken tenders for dinner tonight. Just 3 ingredients - chicken breasts, egg, organic unsweetened flaked coconut. Herbs recommended. Had them with a side of edamame spaghetti from @seapointfarms with marinara sauce. Also seen on the plate is a chicken quinoa meatball that my hubby prepped for himself. However, I ended up only eating 2 chicken tenders and the pasta and was full! The coconut chicken tenders were absolutely delicious and will definitely be something I make often!
Easy and delicious; smashed avocado, sliced tomato (fresh from the garden) and shredded chicken breast on multigrain toast.
Salt and pepper of course 😉
