This is how I feel today…
I have just finished reading Dr. Wright’s book “Why stomach acid is good for you” for my NTC studies, which really emphasises the critical role of stomach acid (and the whole GI system!) to overall health. 💪
But while this information is not new for me, what really strikes me the most is the fact that this information is so simple, so logic and has been hypothesised, tested and confirmed by numerous studies (and for some for so long) that I don’t understand how it can be continuously ignored by conventional medical practice! .
Unless of course, we consider the personal interests of the pharmaceutical industry in keeping things this way, a theme so well described by Dr. Wright throughout the book.😫
It’s scary to think about the number of persons suffering from problems that this approach will only mask and even worse, the number of persons suffering from the endless consequences from this type of medication, both ignored by the pharmaceutical industry!
For me, this is the most overwhelming point, to know that public health, for its most, is just a secondary consequence of a very lucrative business…
I must admit that my initial reaction after realising about this sad truth is a mixed feeling of overwhelm and discouragement.
I know that at some point I will be able to turn these feelings into a tremendous willpower and determination to do my best to change this paradigm. I know myself, this is what I eventually do.
But for now, I really feel overwhelmed and discouraged. 😔 And that’s OK, I think…

I woke up before seven this morning and was admiring the beautiful view from our apartment in La Spezia. Today I actually need to do some stuff for Uni but we will explore the city in the afternoon and will drive to the Cinque Terre tomorrow ☺️ I am really enjoying the more quiet place we chose for the next couple of days after the business of Milano and Florence.

Ich bin heute morgen schon früh wach gewesen und habe den Ausblick von unserer Wohnung bestaunt! Wir sind für drei Nächte in La Spezia und ich geniesse die Ruhe total nach Mailand und Florenz! Heute wird auch nicht so viel unternommen, da ich was für die Uni machen muss. Morgen sehen wir uns dann aber die Cinque Terre an und da bin ich schon total gespannt drauf 😍😊 Geniesst das Wochenende Ihr Lieben!
Normal fried rice is filled with soy, unnecessary sodium, and even sugar sometimes. Not this version- made entirely of veggies and healthy seasonings. Coconut Aminos replaces the soy sauce and it’s the best! The texture is so similar to regular rice that it will satisfy that craving. If you like normal fried rice then you will love this version
Prep time: 5 min
Cook Time: 17 minutes
Yields: 6 servings
• 1 large onion, diced
• 1 1/2 cup carrots, diced
• 2 tablespoons coconut oil
• 1 teaspoon salt
• 1- 1 1/2 teaspoons ground ginger (we prefer more, but adjust to taste) • 1 teaspoon garlic powder
• 1 large cauliflower, grated or 12 oz bag from Trader Joes
• 1/2 cup coconut aminos
• 2 eggs, scrambled • 1/2 cup diced green onions
1. In a large pan, cook the onion and carrots in the coconut oil until soft. About 7-9 minutes.
2. Season with salt, ginger, and garlic as it's cooking.
3. Once the carrots are tender, add the cauliflower and coconut aminos.
4. Stir to evenly coat the cauliflower and cook for about 5 minutes.
5. Push the mixture to one side of the pan and add the scrambled eggs. Stir until cooked, then mix in.
6. Add the green onion, take off the heat, and serve.
I have to say, i dislike cooking, but only for myself. If i am cooking for others, it is fun and no longer a chore i do because i have to eat. But when cooking is too dreary, just crank up the music and it is a cooking/dance party!💃😳 And since I am gluten free, had to add some fun quotes that describe my life. 😁
Fasting is something I wish I could do more, but since my blood sugar tends to be naturally low, traditional fasting is not a viable or safe option. So I try to eat smaller meals or choose to fast from my favorite foods. Try it! Even a small change such as this is amazing!
My stomach may be happy but my heart is even happier 🙃. Soo soo happy to make a trip to Bend and eat at our favorite Thai place. Their coconut rice is a game changer. I’m currently laying next to the fireplace, admiring my full stomach, and thinking about how I should have ordered 10 more of this exact same meal. Meal prep, right?
First birthday being coeliac ✅✅ so of course I had to make my own cake right! This flourless cake is made with almonds and is super dense in the middle and crunchy around the sides! Day 11 done...AAA...Arms, Abs, Ass. Man, I’m sore lol. Today was the first day I didn’t want to cook. I wanted to eat sugary cereal and fall asleep. I was up for over 24 hours, which is very typical for me on Thursdays because I switch back from days to graveyard. It’s hard. I’m exhausted. Did I eat the cereal? NOPE! I came home and walked Harley and made some eggs and veggies before going to bed. I did not give in to temptation or exhaustion. In the past I would have and given myself the excuse that it’s ok cause I’d been up forever and worked all night and worked out twice...but I didn’t do it. I didn’t given in. Easy delicious meal! Ranch pork chops with steamed veggies!
4-6 pork chops
1 packet hidden valley dressing mix
2 cans GF cream of chicken soup (do not add water)
Place in crock pot and cook on low 6 hours. 😍🍽🍴
Who knew eggless omelets were a thing or that they could taste so good (especially when filled with all the veggies)! 🐣🥦🍅🌿😋
I must say, I’m eggdicted! 😉🥚
1/4 cup + 2 TBS nut milk
1/4 cup @bobsredmill chickpea flour
1/2 TBS ground flax seed
1/2 tsp apple cider vinegar
1/8 tsp baking soda
pinches of salt, garlic powder, and turmeric
Mix all ingredients together and let sit for 10 minutes while preparing vegetables. Pour batter into a non stick frying pan on medium low heat and swirl pan to spread out batter into a thin layer. Cook for 3-4 minutes then add sautéed vegetables and fold omelet in half. Remove from head, add a few drops of water to the pan, cover, and let steam for 5 minutes.
Sauté your favorite vegetables together (I used onion, celery, broccoli, kale, and cherry tomatoes) and add seasoning to taste (I did salt, oregano, and thyme, but be creative and add your favorite spices!)
Sweet Salmon Teriyaki Bowl 🍚
Need a quick dinner idea ? Roast together salmon, veggies and potatoes in olive oil on a pan. Then drizzle teriyaki sauce on top and mix into a bowl.
To make gluten free teriyaki sauce
1 1/2 cups cold water
3/4 cup packed brown sugar
1/2 cup soy sauce
1 tsp garlic powder
3 Tbsp corn starch
1 tsp sesame oil
Best way to end a long week! #fridaynight
