I've been doing lots of experimenting over the past few weeks with some raw cakes & have discovered the power of the cashew.
This seemingly plain nut creates the most wonderful cream when blended, & I've been adding like it's going out of fashion to so many recipes.
This weeks Blueberry Muffin smoothie is made with frozen blueberries, cashews, vanilla vegan protein & almond milk.
The deepest richest purple colour & packed full of purple power.

Tried something new today from on older cookbook I haven’t opened up in a while. It was like finding a new treasure! 🤩
I don’t know if I was just simply starving after Prenatal Fitness tonight 😅, or if I was just so pumped how quick this recipe was, or maybe how satisfying a good sandwich is sometimes, but you guys! This was sooo delicious! 🙌🏻
First off, the tart homemade #cashewcream sauce in this recipe is heavenly. The mix of chickpeas, celery, and green onion, with the sweetness of cranberries and a Granny Smith apple was so complimentary. .
Served mine open faced on toasted #glutenfree seed bread from @littlenorthernbakehouse and B had his smashed between two pieces of fresh #speltbread from @tallgrassprairiebakery . 😋 .
So excited to have a spin-off of a chicken salad/egg salad sandwich that was dairy free and way better than any salad sandwich I’ve had in years past. .

Dinners for this week turned out AMAZING !! @eatbanza pasta + a homemade vegan cashew cream sauce + sautéed tomatoes and spinach 🍝 This also took me under ten minutes to put together, so that’s a definite win. I’m so in love with this chickpea pasta though. I keep it on hand in my pantry when I need a quick meal prep option like this week. I think the shells might be my favorite 🙌🏻 Hope you guys are having a great start to the week 🤗
So this was my first attempt at a cashew cream sauce (and I winged it). Turned out fabulous! Just cashews, water, nutritional yeast, garlic, and cayenne. I encourage anyone who has never made a cashew sauce to do it tonight! #vegandinner#cashewcream
Nice Cream Bites? Mini Sundaes? Hot Mess Yummmies? Not sure what should I call theses ... probably doesn’t matter cause they won’t last long! Frozen banana chunks topped with homemade sweet vanilla cashew cream, @terrasoul coconut chips and @enjoylifefoods mini vegan chocolate chips, and drizzled with @madhavasweet raw agave syrup. My inspo ... my brilliant vegan gal pal @balanceandbasil! Frankly, her’s totally looked better!! 🌱🍌🥥🍫
Last night’s dinner... I wasn’t going to post it (not sure if it is Insta worthy 😝) because it is such a random combination, but enjoyable nonetheless so here it is.
This is not what I intended to cook but I didn’t have ingredients for the recipe I intended (which included the cashew cream), so I was made do with what I had on hand.
So here we have homemade baked beans using organic cannellini beans (this was already made, so just heated up), with smashed avo, cashew cream and coconut flat bread. I would have used bread or tortillas but I did not have any, so I quickly made coconut flatbread 👍🏼 Literally takes 15 minutes (and 10 minutes of that is bake time).
Besides the coconut bread which contains an egg, the rest of the meal is vegan. I know that you can make coconut bread without the egg, so if you know how to do that can you comment below or send me the recipe as I’d love to do a vegan version of coconut bread! 💚
I spread the avo over the coconut bread, and then topped with the cashew cream and ate like that 👌🏼
This is excellent for #messyeating , the cashew cream and coconut bread was a big hit with my daughter, and some beans and avo were eaten too. So overall, a well received dinner by her 😂
So if you watched my stories last night, I showed briefly how to make cashew cream and said I would post step by step so here it is...
1 cup of natural cashews
Juice of 1-2 lemon
3/4 cup of filtered water, extra
Soak the cashews in the filtered water for 3 hours
Drain the cashews
Using a food processor or blender (I used the MagicBullet which I use for nearly everything), process the cashews with the juice. I suggest adding the lemon gradually to achieve desired consistency. You can always add more but you cannot subtract. To thin out cream more, add more filtered water
Season with salt
Store in glass jar in fridge
You can use cashew cream savoury or sweet by changing the ingredients.

By the time I went to get a bowl of Tikka Masala at the #BeatsAndEats event this past Wednesday, it was all gone! All good tho, glad to have fed everyone, around 70 bowls served to be exact. But yesterday I had to get back in the kitchen for another special batch of #Shrimp#TikkaMasala with homemade #CashewCream served over #Quinoa instead of rice. Delish! #ChefNotion
