Buffalo Chickpea Blue Cheese Salad. 🥗🍴With Greek yogurt dressing, shredded carrots, red onion, celery, blue cheese, and Frank’s buffalo roasted chickpeas. Recipe for the salad/dressing from The Dude Diet Cookbook. Original recipe calls for buffalo chicken. I decided to try this with buffalo roasted chickpeas instead. Recipe: 2 cans of chickpeas drained & rinsed. Put on a pan with parchment. Toss with 2 tbsp olive oil. Roast at 400 for 15 minutes. Take out and toss with 4 tbsp Frank’s hot sauce. Roast 5 minutes, take out and toss with 4 tbsp of hot sauce. Roast another 5 minutes, take out and repeat once more. I used a total of 12 tbsp Frank’s and 30 minutes roasted. You can roast longer or add more Frank’s if you want. I just don’t like them to be TOO crispy. After you can sprinkle a little sea salt and then let cool slightly before adding to the salad.
