Let's give a fresh start to Sunday!
Here is my try at Cucumber Pad Thai Noodles with Cucumber juice(squeezed from the spiralized cucumber). I found out the noodles taste best when they are cold and don't forget to add sufficient salt to it. I choose rock salt for this recipe and it was yummy. The base for the sauce is peanut butter, white sesame seeds ground with vinegar, lemon 🍋 juice and honey🍯. To made the dish more authentic, I garnished it with some roasted peanut and ate it with my trusted wooden chopsticks. I tried eating it fresh, as soon as it was made, but it was top creamy for my taste, so I ended up saving it for my lunch in the fridge when I made garlic bread(which is nothing but toasted bread with some garlic butter from Amul) for breakfast along with my refreshing cucumber juice.
Mom commented that it reminding her of 5 star hotel breakfast, for it was too decadent for breakfast.
But as I vow towards, zero waste food and consuming breakfast, no matter how late I be for the day, I decided to try out some good healthy breakfast options. Let's see how they all go on, from now. .
