So here’s the exciting news 😁😁 so as from Saturday I’ll be full loaning this wonderful mare . Her names bonnie and her show names bonepatite she’s a 15.1hh trotter x cob . She needs work with her jumping and canter but with time she’ll get there . 😁 my plan is to bring her on this year with my mum and compete jester then as of next year when I move up she’ll be ready for me to move on to 😌 so well be picking her up Saturday morning and I’ll get some more photos then . Lemony Kale Soup
This is a favorite in my home:
1 Tbs Olive oil
1 large yellow onion, diced
1/2 Tbs fresh garlic
1 Tbs ghee (or coconut oil)
1/4 tsp dried rosemary
1/4 tsp dried thyme
1/8 tsp dried oregano
1 lemon, juiced
32 oz chicken stock (or vegetable stock)
2 15oz cams of cannelini beans, drained (or other white bean)
1 to 1.5 cups of kale, torn and destemmed
Heat olive oil over medium heat until shimmering. Sauté the onion and garlic. Add the ghee and as it melts stir in the herbs. Let cook for a minute or two.
Add the lemon juice (and optional sliced lemon peel) followed by the stock and stir to combine.
Bring to a boil, then reduce heat and allow to simmer for about 15 mins. Season with salt and pepper and taste.
Add beans and torn kale and continue to simmer until warmed through (3-5 mins)
* if using a more delicate green, such as spinach, add right before serving! 😋🥄🍜 #bonapetite
